When you are looking to prepare a quick meal, what do you make?

Spaghetti--a jar of Ragu or Prego, some ground beef, maybe a can of crushed tomatoes and some Italian seasoning. Can't get much quicker than that, other than take out.
 
just quick or quick 'homemade'?

superquick-whatever can go in the microwave (it's realy rare that we don't have leftovers or like tonight-frozen items on hand).

-chili (1 hour start to finish even if the ground beef is'nt defrosted)
-"enchiritos" (same ingredients as taco bell uses)-i can put together while oven heats, so less than 45 minutes
-bagle pizzas
-burgars (can toss them frozen on the bbq)


now it used to be i could count spagetti in that group because i can throw together a scratch sauce in no time, but it takes for freaking ever for the water to boil where we live so it's now a much longer process.
 
Really quick meals in our house (for those frantic evenings) always ahve salad and/or fresh fruit on the side (no extra cooking):
huevos rancheros
Pasta with jarred sauce (and veggies added)
grilled cheese (or ham and cheese) or quesadillas
chicken or brats and rice
chili from canned beans with corn muffins
 

Really quick meals in our house (for those frantic evenings) always ahve salad and/or fresh fruit on the side (no extra cooking):

Sometimes we do breakfast for dinner...it's quick and easy, and we usually have the goods required available all the time. Plus, my family loves breakfast, so they are OK with it. Easy for me and everyone's happy.

Goulash, and a loaf of crusty french bread
Grilled cheese sandwiches and tomato soup
Fish sticks and tater tots
 
Penne with tomato sauce
Garden burgers on toast

we make fajitas -- I just toss the meat and veggies into a heated cast iron frying pan, and keep them moving so they don't burn. meanwhile, I heat the tortillas in the microwave. Total time including prep is about 10 mins.
 
eggs, grilled cheese, or some form of pasta with contadina sauce. all easy and quick.
 
I do alot of the same as previous posters but here are a couple of others:

sloppy joes
hot roast beef and gravy subs
casseroles
swedish meatballs over noodles
grilled sandwiches/paninis
crockpot meals...tis the season!
skillet meals, like the ones using campbell soup

I also like to have meatballs, chicken breast and ground beef cooked and frozen for use in chili, spaghetti sauce, enchiladas, pot pie, ala king, etc.

Forgot to say that I use the Holland House cooking wines alot to make chicken francese and marsala.

Most of my meals are pretty quick because I almost always have pre-cooked diced chicken, homemade sauce and MB, and frozen shrimp in my freezer, all of which can the main part of a meal in less than 15 minutes: fajitas, chicken pesto ziti, chicken chili, MB subs or spaghetti with MB, shrimp fra diavolo, shrimp scampi, you get the picture!
 
If I have forgotten to defrost something for dinner:

Pasta primavera-fettucini with sauted fresh veggies-broccoli and mushroom and jarred white sauce
 
omlets, Stauffers frozen lasagna in the microwave and salad from a bag, fruit salad and a cream cheese bagel, grilled cheese and vegetable soup(usually make a pot of this every other week with veggies that need using), stuffed baked potatoes - again using leftovers or veggies needing use. I LOVE a baked potato(nuked) with cottage cheese and salsa!! yummm
 
A main-dish salad. I always have a container of mixed salad greens in the fridge, so it's easy to throw those in a bowl, and add some chopped vegetables, croutons, maybe some blueberries (that's what I've been adding lately since they are cheap right now) or other fruit (diced apples are good too), and some protein. We're vegan, so it's usually cooked tofu or drained, canned chickpeas but if you eat meat you could add leftover cooked meat. Or I might just serve some hummus and pita bread on the side and leave out the croutons.

Pasta - I'd never use jarred sauce, but always have homemade in the freezer. I usually have some frozen italian bread in there, too.
