When will the decorations be gone?

If we were at WDW the week of Jan. 5-9, 2004, would the holiday decorations still be up?

Yes, I believe the Christmas decorations will still be up at that time.
We have gone several times right after New Years and I remember for example the Christmas Tree at Magic Kingdom.
So at the least for the beginning of your visit there will still be Christmas at Disney.

I went one year on Jan 2 (I usually go the second week of Dec.) and was surprised at how much of the Christmas decorations were already down.

The Osbourne lights will not be up this year but on other years they ended Jan 3rd. I think all of the stuff at DTD was down by Jan 2nd or 3rd.

It takes awhile to take it all down but they definitely start the process right after Jan 1. Even the stuff that is now completely taken down may not have the lights turned on anymore at that date.

We were there last year on the 4th - 8th. MK did not have decorations up, but Epcot and MGM and AKL still had theirs up and they were lit up at night. The resorts all had their decorations still up, too. I think that the last day or two you could see them taking some down at Epcot, like the big tree. We even got to see the Osborne lights still up on the 4th, but of course, they will not be there this year. They were even still playing Christmas music in many places yet. We are going this year on the 2nd - 7th and hope they are still up then, too.

Well that would certainly be a bonus! I wasn't really expecting any Christmas stuff, but if it's still up Jan 4, I'll be pleasantly surprised!
