When to book Epcot lunch for a 7:35 Magic Kingdom FP?

We are park hopping on Prez Day, starting in EPCOT and finishing at MK, with 2 major objectives:

1 - Maximize time in EPCOT
2 - Don't miss a 7:35 Fastpass at Space Mountain. (First of three fastpasses)

We've been to WDW a number of times but never hopped with deliberation. Usually, Park #1 is planned and Park #2 is on a whim if we go at all. In this case I'm assuming:

7:35 Space Mountain
6:35 Main Gate
5:35 Board Monorail at Epcot
5:00 Leave Rose and Crown Dining Room

I'd rather leave a little extra time to kill on Main Street or Tomorrowland than sprint to make the 8:35 FP cutoff. Am I leaving too much or too little time on any of these steps? Crowds will be significant.

I think your plan is fine. I would lean towards you having a little extra time on Main street or in Tomorrowland.
 
This sounds like it's fine to me (and I always err on the side of leaving too much time).
 
If you really want to maximize your time in EPCOT, you may want to consider the new express bus transportation. You can get on the bus near Spaceship earth and be dropped off next to Buzz Lightyear in Tomorrowland. You wouldn't have to leave EPCOT until 7:00 or so (depending on what time the EP to MK bus departs, every 30 minutes) Cost is $15 per person for one day use.

The nervous Nellie in me makes me worry about busses being full and needing to wait 30 minutes for the next one.

My experience with the express busses is limited to that one day, but the most people we saw on an express bus was maybe 10 people. I can't imagine the bus would ever be full, unless close to park closing.
