When should I book my hotel

We have decided to go in early December. Haven't decided yet on where we are staying, but thanks to many of you I have narrowed it down to a few choices (much better than I had a couple days ago).

Once we decide should we book it right away or wait to see if there are any sweetheart deals in early December since it's not as busy that time?

I would book as soon as you decide where/when you want to stay. That will also give you the best chance for securing a AAA rate if you are a member.

If you do a room only reservation (not a package), and a better deal comes along (free dining, general public code for rooms, etc.), you can always either call CRO and see if they will apply the deal to your current reservation (if there's availability), or you can always cancel (as long as you're 6+ days out) and rebook the better deal.

Even though early December is supposed to be low crowds, I do think it's becoming a more popular time of year to travel, so it would be best to secure something you're pleased with as soon as possible. Additionally, Pop Warner football will be having their big meet at WDW the first full week of December, and their presence might make reservations at the value, and some of the moderate, resorts hard to come by.
