When is the best time? Small crowds?

We went the third week of January this year and it was very slow, never waited more than 10-20 minutes for any ride, and the hotel seemed empty. In fact there were only two people in the pool every evening, us!

We're also going in November, the week after Thanksgiving, I've heard conflicting reports about how busy it will be. I'm guessing it will be busier just from my experience with ADRs. When we booked only a month out for Jan. I got all my ADRs within 10-15 minutes of the times I wanted. I booked over three months in advance for November and had a lot more trouble with ADRs.
