When do your credits expire?

So I’m sure that this has been asked and answered a thousand times, so thanks in advance for your help & patience. I haven’t been to Disney in several years, but when I go I really like the prepaid aspect of the dining plan. I’m planning a four day trip and am considering a split stay. If I stay three nights at a resort with a dining plan, I can use the credits on my arrival day, my first & second full day and my “departure” day. Am I remembering this correctly? Then I can use those credits on my “arrival” day at my second stay? Thanks!

Well, specifically 11:59 PM, because technically midnight is considered the next day.
