what would happen if you overbeat them????
 
Too much Fluff in whatever you are making. (like in a quiche you would have a jiffy pop top kind of quiche)

I was going to say it would mess w/ the air added to the recipe. So Java is right--too much fluff.

Cook the overbeaten eggs into scrambled, feed them to your dog, and start over again.
