What's Your Favorite Summertime Dinner/Supper

I'm always looking for new ideas. What is your favorite summertime dinner/supper? Steak salads and tacos are favorites in my family. How about you? :)
 
Fajitas and Soft Flour Tacos, quesadillas, etc. with grilled veggies, chicken, shrimp, steak all grilled on the grill is our favorite that everyone likes.

We also do grilled BBQ chicken, beer can chicken on the grill, grilled fish (DH likes only), sausage and peppers/onions on the grill, your typical burgers, hot dogs, brats

In the kitchen we like lots of salads, mostly chicken tenders grilled on salads, summer quiches with vegetables like zuchinni and light sandwiches like BLTs.
We do a lot of vegetarian meals with fresh summer vegetables and fruit like sliced tomatoes with onion/fresh mozzarella and basil with Italian dressing and sliced fruit with Cool Whip.

Oh, thank goodness it's warm weather, I'm making myself hungry for all the yummy summerness!
 
Once the farm stand opens we are all about the eggplant. It is so yummy- And we do the tomato mozz basil salad. Lots of grill- whatever- We eat lots of shrimp in the summer too.
 
We make a lot of entree salads to eat. Some of our favorites:

- Black bean and corn salad. Mix black beans, corn, red pepper, green onion, cubes of cheddar cheese, avacado and dress it with olive oil, lime juice, and salt/pepper.

- Mix cooked cheese tortellini with chopped tomato, cubes of mozzarella, and dress it with pesto sauce.

-Seven layer salad. We do our own favorite combo of veggies and cheddar cheese and dress it with a dressing made from mayo, red wine vinegar, parmesan cheese, and a little bit of sugar to make it sweet. Yummy!!!

- Side salad but so yummy is blanched green beans mixed with blue cheese, pecans, and red onion and dress with balsamic vinegar and olive oil.
 

Lots of grilled veggies and shish kabobs, chicken and steak. I also love grilled sea bass. Most all summer meals are grilled.
 
Ours is easy...but expensive.....steamed crabs!:thumbsup2

We just had 1/2 bushel of large males ($110.00) on Monday.

Oh these sound so good!!!

I'm also going to have to try the beer can chicken on the grill!

We like tuna salad over diced tomoatoes with deviled eggs and potato chips. It sounds so simple- but soooo good. We also like steamed crabs(yes it gets expensive- LOL)but a Maryland staple. Also tomato/mozz salad.:thumbsup2
