What's up with Freezer Burn?

What the heck?? Why do I buy frozen items that look perfectly fine, put them in the freezer, and then when I take them out they have turned into a huge ball of ice with brocolli flowerettes in the middle? WHY, WHY, WHY?
I cooked it anyway, and it stunk like freezer burn no matter what I tried to douse it with.

How long was it in the freezer? Maybe try turning down your freezer just a tiny little bit.

Try turning down your freezer and defrosing it to get rid of any built up ice.

Might also want to try those freezer guard type ziplock bags.
