What's on your menu for this week? New Week 11/8

I'm getting a bit bored with dinner. I have a ton of cookbooks I can look through but thought I'd see what others are making for dinner this week.

Monday--chicken enchiladas with brown rice and squash
Tuesday--homemade pizza with salad
Wednesday--tuna melts with fruit salad
Thursday--shrimp and veggies noodle bowl
Friday--beef stroganoff on noodles with veggies
Saturday--dinner out
Sunday--crab legs and cheesy potatoes with salad

So what are you making this week? Care to share for inspiration pretty please??
 
Monday - No idea. Girl Scout meeting at 6. Something quick and easy.

Wednesday - Beef Fajitas and Rice.
Thursday - No idea. All the kids have swimming lessons at 5. Something quick and easy. :sad2:
Friday - Going out for dinner.
Saturday - Grilled chicken, Baked Potatoes, Roasted Broccoli.
Sunday - Beef stew.

It's a busy week here. Not too inspirational.
 
Tonight - leftover chili
Tuesday - Grilled BBQ Chicken stuffed with Monteray Jack cheese, DH's special oven baked fries on the side
Wednesday-either taco's or healthified mexican pasta skillet
Thursday-something fast (maybe pizza?) since we have soccer practice at 6:00
Friday-NY strip steaks (on sale 1/2 price)
Saturday - NC State Fair (deep fried anything, meat on a stick, etc) :banana:
 
Mon - Mini taco's, cheese dip, bean dip, and salsa
Tues - Meatloaf, mash potatoes, and a veggie
Wed - Ham and Beans, cornbread
Thurs - Scrambled eggs, sausage, toast and mixed fruit. DD and I have to be at the dance studio by 6:30, so this is the quickest meal we have.
Fri and Sat - DH and I are outta town, don't have confirmed plans yet.
Sun - Roast with cabbage, onions, potatoes, and carrots.
 

I'm in a rut too.

Yesterday, DH grilled a brisket so I put the leftovers in the crockpot with BBQ Sauce so we have BBQ sandwiches to eat. We also roasted a chicken so we have that to eat too. I need ideas on what to do with the meat. I'll boil down the rest to make soup for DD.

Monday - scouts - BBQ sandwiches with potato salad and coleslaw. Maybe salad. Freeze the extra for later
Tuesday - halloween shopping for DS - something with the chicken breast. Maybe chicken tacos or quesadillas
Wednesday - golf - this is a toughy since we don't get home until 5, maybe the soup
Thursday - football practice, DD gets fed 'picnic style' at pratice, DS will eat a light meal before and then we'll pick up something on the way home
Friday - no clue
Sat - no clue, that is garage sale day and DS has a Halloween party so likely something in the crock pot.
Sunday - maybe chili or something since DS's football game is in the middle of the day

real exciting, I know!
 
Mon~ Pumpkin Penne
Tues~ Maple Chicken Dijon in the crockpot with rice
Wed~ I'll pick up some fresh fish...maybe potatoes or sweet potatoes on the side
Thurs~ Crockpot Pasta Fagioli
Fri~Pizza
Sat~ something on the grill. Dh can take care of it...
Sun~ Spicy Chili con Chilie

Always with salad.

3 of these are new recipes. I am having the same problem as you, Tina. I am reaaalllly bored with the same old same old, so I made sure to plan meals this week. Not to mention I need to make food that the kids will eat and make it weight watchers friendly.:headache:
 
Monday -- Turkey Chili with Brown Rice and Salad
Tuesday -- Grilled Pork Chops, Noodles with Smart Balance and Parm Cheese, Brocolli
Wednesday -- Stirfry with beef and veggies with Brown Rice and Salad
Thursday -- :confused3 probably leftovers or grilled cheese and soup
Friday -- either an Amy's frozen pizza with salad or take out
Saturday -- Date night!
Sunday -- Taco Soup and taco salad
 
Mon Dinner out: Calzones
Tues - Hungarian Pork Chops
Wed - Salad with Chicken and cranberries and asian pears
Thu - Manicotti
Fri - No idea
 
Monday - BBQ country style pork spare ribs and rice
Tuesday - leftovers (chili, meatloaf, pork)
Wednesday - corn chowder
Thursday - cream of broccoli soup
Friday - leftovers (soup)
Saturday - no idea
Sunday - no idea

We will probably go out at least one this week (I suspect Wednesday) which will move things around a bit.
 
Monday: black bean soup, roasted corn and hatch chile quesadillas
Tuesday: shrimp in a vietnamese garlic-caramel sauce, seasame soy sugar snap peas, rice
Wednesday: chicken bratwurst, potato pancakes, sauerkraut, applesauce
Thursday: probably going out
Friday: chicken milanese topped with arugula salad
Saturday: four kinds of homemade pizza for a birthday party. tomato-basil-fresh mozzarella, sausage-peppers-onion, pepperoni, and feta-fig. Plus salad.
Sunday: fish, but not sure what kind yet. Whatever looks best at the market.
 
I don't usually plan out our meals anymore. DH is out of town for work most of the time so it's just me and DS. We kind of wing it. But I can give you a couple of suggestions that we really like:

Tuna Spaghetti

a big glug of olive oil in a deep pan
3 or so cloves of chopped garlic- cook slowly over a gentle heat until golden
add a big handful of chopped fresh parsley - cook for a minute
add a large can of diced tomatoes with the juice, turn up the heat a bit to medium high - simmer uncovered for about 30 minutes. Stir occasionally.
Add a can of tuna (drained)( you can add two if you want as the original recipe does call for 10 oz of tuna) - keep simmering for another 5 min.
Remove from heat and add 1/4 cup butter (not margarine)
Combine and correct for salt and pepper.

If you like salmon this next one is amazing, I made it for a date night with 'ma sweetie' . It is called Bloody Mary Salmon - you are basically using all the ingredients of a Bloody Mary and poaching the salmon in it. I actually used Mott's Clamato juice instead of tomato juice and added a dash of celery salt. I served it with a crusty bread and a salad.

Tuesday - Tuna Casserole
Wednesday - Roast Chicken
Thursday - Turkey Kielbasa One Skillet Dinner
Friday - Meatloaf
Saturday - Shrimp and Linguine
Sunday - Stuffed Peppers

Not very inspirational but I am in comfort food mode I think. I will also be baking an apple crisp and chocolate chip/toffee cookies.

Tuesday: Mexican chicken in crockpot, salad
Wednesday: Leftovers
Thursday: Spareribs in crockpot, egg noodles, vegetable, salad
Friday: Soup & sandwiches
Saturday: Baked ham, scalloped potatoes, vegetables & salad
Sunday: Wicked chicken casserolle
 
i tend to take it day-by-day. today will probably be grilled hamburgers with green beans and mashed potatoes. tomorrow may be take-n-bake pizza. if not, i'll likely make turkey burgers with lima beans and roasted potatoes. if no pizza on tuesday, i might make crustless pizza on wednesday with salad, tacos on thursday and sloppy joes on friday.
 
We're Chinese-American, so this may be somewhat exotic to you...

Monday: Stir fried shrimp and scallop with snow peas, served with rice and leftover chicken soup
Tuesday: Chinese sausage fried rice (using left over rice)
Wednesday: Pork dumplings and napa cabbage soup
Thursday: School band concert, probably picking up a pizza for afterwards
Friday: Sesame noodles and teriyaki chicken
Saturday: Korean seafood pancakes and grilled galbi (Korean short ribs), served with rice
Sunday: Homemade chicken dumplings, steamed and pan-fried
 
I make everything up as I go along. We're on a low carb diet so here's what we're doing so far.

last night we had breakfast. Scrambled egg beaters, bacon and french toast made out of my homemade almost NO carb bread.

Tonight low carb Pizza made on low carb pizza crust. Probably a white pizza

Tomorrow night I teach cake decorating at 6:30 so we're each on our own.

Wednesday possibly a sausage and peppers "pasta" over spaghetti squash?

We are a low carb family by necessity. My husband is a type 1 and my son was just recently diagnosed. So if you could share info on this I would appreciate it.

Do you buy low carb crusts or do you make it?

If you make it, could you share your recipe? If you buy what brand?
