What's Good With Guacamole?

My DF wants to make guacamole for dinner for the two of us on Friday before we go out with friends later that evening. When we make it, we make it as though it's the main course - meaning we make LOTS of the stuff. We usually make something else with the guacamole as a side dish (if that makes any sense at all... :confused3 ), and last time I made spanish rice, but that wasn't a big hit with DF. Tacos or burritos are too heavy since mostly we just want to eat guacamole.

I haven't the slightest idea what to make! Any ideas? :scratchin
 
Have salad bar ingredients and let people use the guacamole as dressing.
 

Nachos or a salad.

Have a little ground beef w/ seasonings, shredded cheese, sour cream, etc......yum!

Or do a "Santa Fe Salad"....
Shredded lettuce, corn and black beans, cheese, favorite salad veggies with a ranch mixed with salsa dressing...now that is good.

Add in a Margarita...::yes::
 
Try it with seared scallops. That's a pretty good combination.

And maybe bake up some spuds and use the guacamole in lieu of butter or sour cream.

Very simple. Just place the tortilla on a hot, flat skillet; fill with cheeses, etc...; flip one side over so you have a semi-circle; flip the whole thing once the first half is crisp. Slice in three triangles and serve!

It's easy, just put 1 tortilla in a hot pan. Add cheese and whatever else you want. Put on the other tortilla and weigh it down with something (a smaller pan is good or you can use a few canned goods).

You can probably do it in a frying pan. Funny, we were cleaning out a closet just the other day and found a quesadilla maker in the box, brand new. I ALSO have one in my kitchen cabinet....same exact one. Must have forgotten about the one in the closet to take back to the store:confused3 :confused3 We may just keep that one in the camper.
 
A very good alternative to guacamole is making an avocado relish. It's basically pico de gallo with chunks of avocado. It's dang addicting.
 
Thanks on the quesadilla help! I'm sure DF will want chicken quesadillas, but I am all about the Santa Fe salad that was suggested. DF's not too big on salad with canned goods inside of it (like beans and corn :rolleyes2 ) so he might not be too big on that idea. I'll run it by him and see what he says.
 
Guacamole is good with everything, but I prefer spoons.;)
 
If you still haven't decided,

A grilled chicken breast salad sounds good. Just make your regular salad take two or three chicken breasts, season them as you like it, I use crushed garlic, you can marinate them the night before for more flavor, grill or cook them until brown. Once their done let them cool, slice them at a slant. When you're ready to eat add them to the salad.

Nena, you need to learn how to prepare Spanish rice it's all in the seasonings you add to the liquid before you add the rice. ;)

If you make too much he won't want to go anywhere, he'll just want to stay home with you.
 
You could always throw some chicken on the Santa Fe Salad... that ought to make you both happy!
