I had Easy Mac. It's been a crazy day and I don't feel well so I went with comfort food (or as close as I could get to it) over the dining hall tonight. Ok, I also didn't want to walk in the pouring rain for dinner A cup of applesauce for dessert. Now that is lazy.

This sounds interesting. What is it???

It's very simple... A layer of crumpled tortilla chips...I layer of taco meat..GB with Taco seasoning) a layer of some sort of green sauce,either enchilada or green salsa,and a layer of Monterrey jack.
If I have them I throw un tomatoes,olives,green onions,Jalapenos,Sour Cream,Guacamole etc.

I am sick with a cold which usually means a can of soup and DH fends for himself. But in my wisdom last week I made 2 small pasta bake casseroles (like lasagne except with spiral pasta and tiny meatbals) and froze one so I pulled that out. I felt so glad that I had something decent I could throw in!
