i have no idea...i may pop a yukon gold potato in the micro and top it with salsa and cheese. dh is having left over soup, which i ate for lunch and ds will have a sandwich, i'm sure. kinda wingin it tonight, since i'm still at work on a phone call! ugh!

recipe please?

Here's the veggie lasagna recipe I used (I can't really take too much credit for it since it's the one on the back of the Lasagna box )

1/2 (8 oz) pkg lasagna noodles (10 lasagna noodles)
8 oz sliced fresh mushrooms
3/4 cup chopped green bell pepper
1/2 cup chopped onion
2 cloves garlic, chopped
2 tablesppoons olive oil
1 26 oz jar pasta sauce
1 tsp basil leaves
1 teaspoon oregano leaves
1 15 oz ricotta cheese
3 cups shredded mozzarella cheese
2 eggs
1/2 cup grated parmesan cheese

Cook pasta & drain. Preheat oven to 350. Cook veggies over medium heat in oil until tender. Stir in pasta sauce, basil & oregano. Bring to a boil; reduce heat & simmer 15 minutes. Combine ricotta, 2 cups mozzarella & eggs; mix well. Spread 1/2 cup sauce on bottom of greased 13x9 baking dish. Top with half each the cooked pasta (overlapping in dish). Ricotta cheese mixture, remaining sauce & Parmesan cheese. Repeat layering. Cover: bake 45-50 minutes or until hot & bubbly. Uncover; top with remaining 1 cup mozzarella. Bake 5 mor minutes. Let stand 15 minutes.
