What's for dinner? Was it "budget"?

Hubby has a meeting and said he would pick something up on the way home. DD has ballet so we will either come home and have grilled cheese sandwiches and tomato soup or I will have that and I will stop and get her a kids meal from McDonalds.

Bread - 0.20
cheese - 0.15
soup - 0.60

total for one - 0.95. (if she eats it, add another 0.20 for bread and another 0.15 for cheese so total for 2 - 1.30) Doesnt get much cheaper than that!
 
last night was just so hot....80 degrees still at 6...that I didn't want to cook: We ended up doing a baked potato bar

Today it's cold and snowing: I think chicken parm (less than $6 for the fixin's)

Tonight we are having corned beef and potatoes. Everyone in the family loves this, so when the beefs go on sale around St Patty's, I always pick up several and freeze them. Hence this one cost me nothing from my current budget. ;)
The beef and the potatoes have been in the crockpot all day long. I think I will make green beans to go with it.
Its 43° here, with flurries of snow... will it ever be spring??

While in Billings...our favorite was "Don't like the weather? Walk a block!":rotfl2:

More than once out one window it was nasty and the other side of the building the sun was shining.:lmao:

tatertot casserole was our supper tonight

2lb gr turkey (93/7) 3.50
1 bag tots 1.48
1 can enchilada sauce .50
1 can crm of chicken (already had so no cost)
1 taco seasoning .33
season to taste

brown meat....add everything except the tots....then layer in a oven safe dish and broil to tater tot directions.....when done add more cheese on top and broil til bubbly!!! yummy and cheap to make

Let see...today we had a frozen DiGiorno Pizza: $5.99
Bag of Salad: $1.49
Onion: I had a bag already
Can of Olives: $1.00
Total: $8.48 (For DH, DD2 & me)

I guess it's not TOO bad considering DH was just going to order a pizza and salad (which was right next to the supermarket where I picked up all the above):sad2: . And I know I can do much better if I plan better :headache:

Yup! It really truely is THAT easy. :)
Open up the corned beef bag, dump the beef and all of its assorted juices into the crockpot, peel some potatoes, put them on top of the beef, add water to cover it all, then cook on low for 6-8 hours. If you want cabbage with it too then core and quarter a small-ish cabbage and put that in on top of everything about 2 hours before you want to serve dinner.

If you like the seasoning packet that comes with the beef, dump that in there too. My family doesn't like finding all those seed-y bits and pieces clinging to their food, so we have found a solution! You know those little silver tea strainer ball thingies? If you make loose-leaf tea, you put the leaves in there to steep your tea? I just dump the little packet of spices into that and float it in the crockpot!

Enjoy! We had an awesome dinner last night, but no leftovers! No corned beef sandwiches for lunch! :sad2:

edited to add: You can cook this recipe in your oven too... just put everything in a baking dish, only add water about half-way up the beef, and bake for a couple of hours (don't know the exact time and temp cause we hardly ever do it this way). We tend to do the crockpot because corned beefs can be SO salty. Boiling it all day leaches out some of the salt and makes it less salty, baking it seems to concentrate the saltiness. But sometimes I think the texture is better if it is baked.

Had a bad night last night...we got take out from KFC. We did use a coupon though...:lmao:

Tonight is sweet and sour pork. Pork loin (part of a whole loin I bought at New Year's time), pineapple chunks, carrots, a green pepper (it cost me over a dollar!!:sad2: ), an onion, sweet and sour sauce, white rice. I had everything in the freezer, fridge or cupboard, so nothing out of this weeks budget.
 
We are going to do Chick-fil-a tonight b/c we got ocupons in the mail yesterday.
DH will buy a shake and get a spicy chicken sandwich for free.
I'll use the "one free spicy chicken" coupon and buy a large fries.
Then we'll split the fries and the shake.
Total will be around $5 or 6, I think.
 
I think we will all eat left overs tonight.

We had that last night with squash and applesauce. Tonight, I think we'll just have sandwiches or leftovers from last night. I'll probably have sliced turkey with cheese and pepperoni on a tortilla heated. It's really good. I had a late lunch so I'm don't think I'll be hungry.

We'll probably have apple slices and yogurt dip too.

We are having Crunchy Casserole

1.50 Rotini Noodles
2.00 Ground turkey (99%FF)
.50 Mushroom soup
.60 Tomatoes (diced)
.50 Cheese
.50 Fried onions...


Salad, garlic bread for the sides...

total about 8.00 for 6 people
 
well cheeseburger mac was vetoed. Hubby brought home fench bread last night (free) so we will have french toast, eggs and fruit..a smidge cheaper.
 
Tonight is angus chuck roast (on sale $2.99/pound) cooked in a slow cooker with sliced mushrooms ($2.09) and a sauce of 1/4 cup of red wine ($3 at Rite Aid) and a packet of onion soup mix (89 cents at Wal-Mart).

Accompanying are sliced veggies (carrots, onion, celery) roasted in olive oil, salt and pepper. This will be great for leftovers, so we'll get at least 1 more meal out of it.
