What's for dinner? Was it "budget"?

Tonight is steak, mashed potatoes, steamed broccoli and coleslaw.

Steak - super sale for top sirloin - $2.99 lb
Mashed Potatoes - $2.59 for a ten pound bag
Steamed Broccoli - .99 lb for crowns
Slaw - pre shredded cabbage .69 for a 1lb bag and we just use light ranch dressing for the coleslaw dressing.
 
Jealous! I wish I could shop where you shop. Those are some great prices!

I love this store! They are pretty local (Montana, Idaho, and Washington only). At least once a month they have a themed "12-hour sale"... sometimes "produce", sometimes "meat", sometimes "baking" (that's usually around the holidays; flour, sugar, etc), sometimes "cereal". Always a great time to stock up!
 
I was a little hurt a while back when someone said they'd move out if they had to eat the meals I served. But I'm over it! ...

I changed my mind. I used the rest of the chicken I baked for a Calif. chicken salad. (That's what we call it.) Just shred the chicken, add (lite) mayo, walnuts, grapes or cranraisins. I'm setting that aside for lunches.

For dinner I'm making a huge salad and will add in breaded chicken strips. For the kids I'm going to give them some goldfish to add to their salads. We ordered a child's salad at some restaurant (Bob Evans?) a long time ago and the kids ate it all! Without the goldfish, not so much. It's magic! :)

I love chicken salad like that! I just went to a cooking class at a friend's church, and we made chicken salad with grilled, cooled and cubed chicken, mayo, grapes, a squirt of dijon mustard, and candied walnuts (you candy the walnuts with butter and brown sugar...)...YUMMMY YUMMMY!!! I made it at home this weekend, but I only had pecans. It was OK, but not as good as with the walnuts!

I cant wait till we get our farmers market back. Our blew away in the hurricane and hasnt been built back (even though there is a sign saying "we will rebuild.... and now 3 later....) Anyway, I have to shop for produce at the grocery where it has been in a truck for a long time and it is very expensive due to the rising price of gas and how much it cost to bring the stuff in.....
 
My son Jeremy made dinner tonight, and he made falafel wraps. The falafel is from a mix - you just add the mix to water, let it stand for ten minutes, then shape it into little patties or balls and cook them in a little oil in a frying pan. Then he set out bowls with salsa, grilled onions, and lettuce to add to the falafel patties in the wraps, and made a salad as well. Oh, we also had some spicy hummus to spread on the wraps. Another easy meal!

Cost: half a package of falafel mix - $1.50
Salsa - about 1/3 of a jar - $1
onions - 20 cents (two out of a big bag)
lettuce - 20 cents?
tortillas - 3 out of a large bag - maybe 20 cents
salad - mixed greens with cucumbers and green peppers - 4 dollars?

So $7 for the three of us.

Tomorrow my son Dan is making dinner (they each do one night a week, and sometimes more) and he's said he's going to make vegan butter chicken (substituting seitan, which is a wheat product that has a kind of meaty texture for the chicken). We love Indian food, so this will be good!

I'm the only one in the household that really loves it! So it will probably be all mine! Ofcourse if I look like I'm enjoying it, someone will want some. Put it on their plates and they won't touch it. Look like you really like it and they are all over it! :laughing:

I'll have to remember the dijon mustard, I'll put some in there next time. And candied walnuts, now that's a twist. I'll have to keep some of these ideas in mind to shake things up. I've just about cut sugar out of my diet, except for what's in sauces and such. I'm thinking a few dashes of splenda on the walnuts might be good.

butter chicken sounds good also.

You definitely have combinations I would never think of....I get in a rut and that is why I love this thread...throws me out of it every once in awhile!!

I LOVE :love: falafel! One of my favorite fast food places (The Pita Pit) offers a falafel pita sandwich... with hot grilled falafel, hummus, lettuce, tomato, any other veggies you want, and a divine tzatziki sauce... To Die For!
Now I am craving one... LOL
 
I was wondering what brand of falafel mix you like. I've never made it at home, but have enjoyed it in restaurants.

We had chicken and dumplings for dinner since DH is sick (and needed baby-ing). Probably less than $6 and we have more than enough for lunch tomorrow.
 
I have never had a falafel but after hearing this AND someone talked about getting one at the Moroccan CS in WDW, I htink I may have to try one! I have however had a gyro when hubby and I went to Greece and it sounds similar. We were in Greece and Turkey back in 99 and I have not forgotten how good that sandwich was! LOL!

total - 4.25 with leftovers. I also have some cake leftover from book club last night so that will probably be dessert.
 
We are having Saucy Beef (beef strips, stewed tomatoes and onion soup mixed cooked in a cooking bag), egg noodles and carrots and green beans.
 
We had a rostierre chicken from Sam's $4.98
a bag of frozen corn by Green Giant .78

Total $6.84 and it serves 5 with leftovers for me the next week.


Sometimes I will add Mac and Cheese for .38
 
Lion's Head soup:

ground pork (1.49/lb at Asian markets)

Chicken stock - homemade from left overs (free)

$6.50 for 3 meals!
 
Tonight we are having Orange Chicken (no breading) (I made it this morning and put it in a Tupperware in the fridge, so we can have it for dinner tonight but don't have to eat really late cuz I will be in school til after 5pm)

Chicken - $5 (two boneless-skinless breasts, five (tiny) pieces boneless-skinless thighs - all chopped up) (sauce was free, because I made a HUGE batch with the recipe posted a while back, and I put the cost in then. This is the third meal i have made with it, I have enough for one more meal).
Rice - $0.25
Broccoli - $0.50
Drinks - $0.25

Total Cost: $6 (I know I will get AT LEAST 4 servings from it, but I think more. . . depending on how ravenous my DH is. So that is $1.50 a serving :cool1: )

I cannot thank the PP enough for posting this recipe. . . though I am just using the sauce it is SOOOOO delicious, both on chicken and little strips of beef. . . yum yum!
 
We had hamburgers on George Foreman, sweet potato fries, and fresh corn on the cob (2 for .88).

No problem. Isn't it just the BEST sauce. I love it! I'm glad you enjoyed it. I will be making it again this week some time as well!



We're having sloppy joes tonight. And potato pieces "fried" in EVOO and coated with dried ranch. Add fresh veggies on the side. Dinner for 6 for about 9.00!
