What's for dinner? Was it "budget"?

I haven't posted in forever but I was staying on budget except for 2 nights... We had pizza one night and went to Anderson's one night. Two nights out since 2/1/08.. Not so bad! (I was sick a lot in the last few months so actually this was very good)

Tonight:

Meatloaf $3.00
Pierogi frozen from Easter - $0.00
Stewed Tomatoes $.75
Can of Green Beans $.50
Drinks $1.00

$5.25

Plus we leave for Disney on Saturday so desserts are whatever fruit is still in the house for the whole week. Snacks are anything you can find in the cupboard to clean them out.

I have hamburger meat, chicken breasts, a whole chicken, 5 hot dogs, and turkey bacon left in the freezer. (Oh a big turkey also, but that's staying in their to keep somthing running in the freezer). Cooking is going to be a challenge this week. :laughing:

Well, I never cooked the London Broil, broccoli and rice yesterday. We wound up fending for ourselves: frozen pizza, sandwiches, etc. so I am making the london broil today.

Tomorrow I plan on making a Cajun Pork Roast with garlic butter (really yummy)...I am going to go marinate it now. I bought a huge roast on sale and will have at least 3 meals and 3 lunches out of it. Not sure of the sides yet, probably mashed taters and carrots.

Hey, thanks! I will take a peek over there. :) When you have a chance I'd like the recipe for the Cajun Pork Roast! Sounds great!

Tonight we're having pigs in a blanket. Just some hot dogs (hebrew national) rolled in cheese and crescent rolls. Leftover baked beans, and something green. I have some fuji apples and cranraisins baking in the oven. No sugar. The fuji apples are sweet on their own. :) That's about it!

Here it is. It's one of TigerKat's. I marinate mine by making a paste with olive oil and the rub. I then bake at 450 for 10 minutes, then turn down the heat to 250 and cook 20 - 25 minutes per #. It truly is great...a little spicy...even better the next day for lunch! ;)

Cajun Pork Tenderloin with Garlic Butter (from TigerKat)

I normally grill the pork, but you can sear it in a skillet and finish off in the oven too!

Dry rub:
1 tsp. salt
1/2 tsp. cayenne pepper
4 tsp. paprika
1 tsp. black pepper
1 tsp. garlic powder


2 pork tenderloins
2 Tbsp butter
1/2 tsp. garlic powder

In a small bowl combine dry rub ingredients. Rub thoroughly into the pork and let sit for 30 minutes. Grill or pan sear/oven finish until done - 170 degrees internal temp. Melt butter and stir in garlic powder (I usually double the sauce). Slice tenderloin on the bias and pour garlic butter over.
 

Tonight we had Manwich sloppy joes (1.99 for the burger, and 1.50-ish for the Manwich, .99 for the buns) and homemade baked oven fries (5 baking potatoes, and seasonings). I also sliced up 1/2 of an English cucumber (.50) and we had baby carrots. I have leftover Manwich and fries for tomorrow.
 
Leftover spaghetti for me, leftover BBQ pork:crazy2: for dh, free meal at work for ds. Yep, pretty cheap I'd say!
 
Tonight is leftover sloppy joes for my DH, my mom and my DS12. My mom will make my DS8 a sandwich after Aikido. DH has to go to a meeting (the reason Mom will be over tonight!), and I'm heading to a Preschool dinner for Teacher Appreciation Week, so dinner will be free for me!)

I think I'll have some blue cheese dressing or ranch on the side for the kids to dip the pork. Crazy I know, but if it's hot and spicy the kids won't touch it unless it has a dip along with it! :upsidedow

Not crazy at all. My husband and son were dipping it on Saucy Susan (apricot/peach sauce)! I think it would be great with the dressing.

I am making chicken stir fry tonight, Chicken was about 6.50 for 3 1/2 pounds boneless skinless. Bags of stir fry veggies, on sale at Kroger 1.00 a bag and I am cooking 4 bags. A bag of white rice, was around 1.00 so about 11.50 for a huge pan and will have leftovers for lunch tomorrow.

Its not there. SS is actually a jarred sauce. Kind of like duck sauce. :thumbsup2
 
My grocery store, Hannaford, has starting doing this thing called "Its on us". They put a sticker on some items and these are things that are totally free! I usually get one every time I go in. It is quite a variety of things I have gotton.

So tonight I made Brocolli Cheese Soup (it was a freebie, you just added chicken broth or water plus evaporated milk) in the crock pot, a bagged salad (another freebie), garlic breadsticks and fresh pineapple for dessert (yes another freebie!).
