What's for dinner? Was it "budget"?

Cashew Chicken - Chicken on sale for $1.19 lb, rice - free from MIL, cashews $4.50 for a huge can. Not too bad. Not sure about the sauce, it was all stuff I had on hand. I fed five today with leftovers.

Don't worry about our veggies. We snack on them all the time.
 
DH working late...

Think we'll just do breakfast for Dinner... me, DS (3), DD (2)

6 scrambled eggs (1.00 worth of eggs)
Toast with strawberry jam (.30 ???)
canned peaches w/ raisins (.69 can/ .20 raisins)
 
I don't know if it was budget, but we had:

Stuffed Chicken Breast (Chicken breast strips rolled up with Crabmeat Stuffing)
Oriental Fried Rice (I love this because of the almonds! Yum!)
Fresh Green Beans
Cranberry Sauce

Everyone really like this and for dessert we splurged. Yesterday at the store I bought a Razzleberry Pie (Marie Callendar). I love this pie so much because I love Raspberries and Blackberries!! So good, but it costs like $5 bucks!!
 
Well it is really gonna have to be budget for a while.......I decided that our upcoming Disney trip was not long enough so I added 2 more nights. They didnt have the extra nights at the AKL so I am staying at the GF! :banana: Yeah, gonna budget now.........

Sloppy Joes (meat...1.49, buns 0.60, sauce 1.39)
Pasta salad...free from mom when she over bought a bunch of groceries
Corn on the cob....1.10

Since DD lost both her front teeth, I will make her some niblet corn that is hanging out in the freezer....

total for 3 people, maybe some leftover pasta salad that I can take to work for lunch on Monday.....4.58
 

Tonight is homemade chicken and noodles and mashed potatoes. I will also cook some frozen corn I have in the feezer as a side, kids eat this so well..
 
Tonight we are gonna have burgers (buns $1.15; meat $2.50; cheese $1): $4.65
potatoes: $1
Salad: $1
Total: $6.65, not so cheap but way cheaper AND healthier than going out for food.
 
Tonight is Grilled London Broil, steamed broccoli and a Lipton rice and sauce.

I do not keep track of how much each item costs but I have been buying most things on sale and really trying to stay on budget. I have never posted on this thread but check in for ideas...figured I'd join in. I am a regular poster on the "What's for Dinner" thread on the Community Board.

Red beans (1/2 bag at 89 cents per bag)....0.45
Rice (1 cup from bag so maybe..)....0.25
Sausage......(1/2 package at $3)....1.50
Cornbread (probably about 0.75, it was already in the pantry)

Total.......about $3 and this will make at least one serving of leftovers for lunch. It would be a lot cheaper with no meat but hubby loves his sausage! LOL!

Tonight I think we'll have pork chops in gravy, brown rice and green beans. Nothing fancy.
 
Last night was chicken stir fry with noodles:

1.25 chicken $2.12
2 bags lipton teryaki noodles $1
1 bag frozen stir fry veggies $1
a little extra frozen broccoli .25 cents

Total = $4.37 Ate it all, but then the kids ate hot pockets afterwards because they were still hungry.:rotfl:

Tonight is french dips in the crockpot:

3 lb. sirloin roast $6
au jus packet .50 cents
1 onion .25 cents
various leftover buns $1???
3 baked potatoes .75 cents
potato toppings $1
A veggie ??? $1

Total = $10.50, but we will have 1/2 the beef as leftovers for DH and I to eat on for lunches this week.

I just went to the grocery and I have the receipts in front of me so I'll post the next few days......

4/7 pancakes and bacon. Pancake mix was in fridge already but probably 1/4 of package at 2.00 so .....50 cents

Bacon (1/2 pack at 3.00).....1.50

4/8 beef stew meat with rice and green beans.

rice 0.20
cream of mushroom soup..0.90
green beans...were already in the pantry but about 0.80 a can

Total - 3.90

4/9 - spaghetti and garlic toast
spaghetti sauce 1.00
spaghetti noodles - 0.50
garlic toast...1.00

total - 2.50

4/10 - pasta primavera and salad
pasta - 1/2 box at 1.00 so....0.50
sauce (in fridge but I have 1/2 jar left at 1.59 so....) 0.80
lettuce.....0.80
tomato.....0.90 (boy those tomatoes were expensive!!)
Veggie hanging out in the freezer (carrots and broccoli)...maybe 1.50 total

Total - 4.50

4/11 - Hamburger Helper and cucumbers/tomatoes

Hamburger Helper - free from Mom
ground beef - 1.50
cucumber - 0.65
tomato - 0.90

Total - 3.05

I also got some stuff for chicken parm, quesadillas and bean burritoes and one of thise nights I can do some baked apples and pears (which will cost about 1.00) and some pudding (which was already in the pantry).

I am really trying to use up whatI already have in the pantry/freezer and so far, it seems to be working well. I have spent $80 on groceries this month and that gives us meals thru 4/12 or so.......

Well, I never cooked the London Broil, broccoli and rice yesterday. We wound up fending for ourselves: frozen pizza, sandwiches, etc. so I am making the london broil today.

Tomorrow I plan on making a Cajun Pork Roast with garlic butter (really yummy)...I am going to go marinate it now. I bought a huge roast on sale and will have at least 3 meals and 3 lunches out of it. Not sure of the sides yet, probably mashed taters and carrots.
 
Morning, all! Happy Monday!
What does everyone have planned for today? After a busy weekend of working and spring-cleaning, I am having a stay-at-home day. I have TONS of laundry :laundy: to get done, and I would really like to get caught up on my scrapbooking.

I have a chicken boiling in the stockpot this morning. When it is done, I will let it cool, then pick all the meat off. Meanwhile I will reduce the stock until it is quite concentrated, strain it, then combine it with some purchased organic stock. I will add the meat back in, along with a couple of bags of frozen veggies. i will let that simmer for a while, then add some egg noodles. Tah-Dah! Homemade chicken noodle soup! I have some rolls and butter to serve with it.

Last night my 13 year old daughter and I made lasagna and I broiled asparagus with olive oil, salt, and pepper. Not exactly budget, but it was Sunday dinner so it was better than eating out. :laughing:

Tonight we are having salmon burgers. I went to Costco last week and I haven't had them in a while.
 
I have NO idea what to make today. . . I was hoping I'd get some ideas from here. . . . hmm hmm hmm. . .. I'll go through old posts and get back to you Sorsha
 
Tonight my husband has to work, so we will have tuna sandwiches. Yum!
 
I had gotton a small ham on sale after Easter so we are having that tonight. I have some asparagus left that I will grill with some olive oil and kosher salt and perhaps some mashed potatoes.
