Happy Easter to all my WFD friends (Happy Sunday to those not observing Easter)! Hope everyone has a wonderful day! We're headed to my parents for lunch--my dad has gone vegan, so one can only guess what we'll be eating. Tofurkey maybe? Hopefully, we'll have lunch for us and then somethind separate for him...God love him, but I can't give up my meat.

Today I am roasting some racks of lamb and making the lemon gnocchi I posted here a while back. My mom is contributing roasted asparagus and green beans to the meal.

Ham
Nutty Lentil loaf
corn
potatoes au gratin
lima beans with ginger snaps
carrots with apricots and almonds
asparagus
bread
fruit salad
and ricotta pie for dessert

And we have shrimp, onion and feta in phylo dough and raspberry brie things in phylo dough for Hors Dourves.

Happy Easter, everyone!

I'm sure Beck will post pictures of the food later. We had rack of lamb, lemon gnocchi, roasted asparagus and green beans. It was yummy.

My mind is elsewhere today (where, I'm not sure ) but I forgot my camera so I didn't get a picture of Caili in her dress, and when I left my parents' house, I forgot my purse. Luckily, my mom noticed right away and had my brother bring it to me.

Happy Easter! Things were great at church this morning and lunch was yummy.

I made:
Brown sugar glazed ham
Green beans (with vinegar, sugar, and bacon)
Corn casserole
Pasta salad
Crescent rolls

Deviled eggs
Mini quiche
Cheeseball and crackers

Better than sex cake

And wine, of course!

Everything was delicious - we have TONS of leftovers!

I do have photos, but they are not great. My Mom gets irritated when I take pictures of the food, so I only have ones of the food right when I dumped it on the platters and I did not have time to make it look nice. I also don't have pictures of the vegetables, because my Mom made those. They were awesome, and my plate with the gnocchi, asparagus, and green beans was beautiful. I was SOOO tempted to get up and take its picture...but I held back. Here is what I do have.

Kat, I made a pineapple bake that is similar to yours but no cheese. This is the first time I made it. I hope my guys like it...I snuck a piece and I think its good...like bread pudding almost.

We are waiting for Andrew to get home and then we'll eat.

Question - if I want to make yummy, greasy green beans with some bacon how would I do it? Fry the bacon first, then stir fry the green beans in where the grease was? Then add the chopped bacon?

Buddy's aunt used to make a green bean dish like this but she kept all of the bacon fat and used it as the base for a cream sauce. She learned this one from her Mom. For the love of God there is a reason that the ladies in my DH family have weight issues and why I have happily traveled down the kitchen path with them. My DH would not touch this or any of the rest of their traditional dishes, and neither would his brother ( they have not weight problems) but the rest of us think that this is what Heaven must have.

Tonight I'm gonna make beef vegie soup from scratch.
