Jenny, It's Potato & Leek Soup posted on page 168. I have to warn you, there's nothing light about that soup! The recipe called for all heavy cream. I used 3 qts. half & half & one quart heavy cream. It took a long time for the potatoes to cook in the cream without boiling it over. But it was worth the wait! Super thick, creamy & delicious!!!

Lauren had posted the Guinness Sauce with the recipe for Irish Brown Bread as the bread dipping sauce! It was really good with the bread, but I think worked even better on the salmon! It was easy, equal amounts of guiness & packed brown sugar. Just cook it low & slow until it really reduces & the bitterness of the guinness just dissapears.

I don't mind the heavy cream as long as it's a rare treat KWIM? That sounds really good though
 
I have to go for my ultrasound and bloodwork today...ugh. I guess I gotta look halfway decent.

I get all of my cream and most of my dairy products from Munroe Dairy. It's a Rhode Island place that actually delivers farm fresh milk etc to your door once a week in glass bottles like the old days.. Their cream and half and half is awesome

You should be proud. I am so happy to hear that Timmy is well. It took Greg a long time to readjust after his last tour. I think things are going better this time though.

UGH! I do not have luck with eggplant. Any secrets on getting rid of that bitterness? I really want to try these again when I can get home-grown eggplant this summer.

What Beck said! I also try to buy the eggplant the day I am planning to use it...or at the longest, the next day.

We are having take out pizza tonight (ham and cheese sub for Caili. She doesn't eat pizza :confused3 ) because we are going to my neighbor's house for haircuts. She is having someone come to her house, and she invited a few of us to join her. I am so overdue for a cut, so I am excited! Caili is getting one too.

The ultrasound technician said she doesn't think any of the nodules got much bigger but she didn't compare my results with the last ones.

I'm glad you're liking the dipping sauce. I think I mentioned that this is the sauce that RR uses on their ribs as well.

Louisiana State Tourism Dept is talking with Disney about hosting a kiosk at the Food & Wine Fest this year!!! I hope they work it all out, I'd love to see how Disney would highlight our state's food! :goodvibes

Jenny, I am officially very jealous!!! That is too awesome, I'm shocked that you can still get fresh milk delivered at home! How cool! And I was happy to find organic & a local dairy's products!!

It was really good! As good as cedar planked maple glazed salmon but a lot less work. ;) Good luck with the hair cuts!

Yep, we like that sauce! It went amazingly well with the salmon.

I wonder if Disney & our state will work that out. :confused3 The article said it would cost the state between $500,000-$750,000 to do it! Our politicians usually expect the money flowing into their pockets!!! They are notorious for not making smart decisions with things like this. Did you know that years back, the metro New Orleans area was being considered for Disney World?! Yep, but local politics put a halt on that!
 
Does anyone have a pineapple stuffing recipe? I have been googling and there are alot but I want one my friends here swear by...anyone? TIA!
 
That salmon looks really good, and anything with guinness in it is good with me!

I think I am making pasta tonight. I am craving a big plate of tomatoey carby cheesy goodness! I'll make an arugula salad to go with it, which will cancel out all of the calories and fat from the pasta, dontcha know. ;)
 
Cut the eggplant into sticks and then toss them with kosher salt. Leave to drain in a colander for about one hour, then rinse, dry, and proceed as usual. The salt sweats out some of the bitterness. Also, the older your eggplant is, the more bitter it will be.

Where's the V-8 slap-to-the-head smilie?? Salting / draining the eggplant never crossed my mind. Of course, I was slightly distracted with the off-schedule crock pot roast. I don't usually buy eggplant off season from the produce stand - we normally get so much fresh during the summer. Now that's a childhood summer chore flashback I'd rather not remember....peeling & processing grocery bags full of those huge eggplant fresh from my Great Uncle's garden.

Zipuzee on the Nola thread, just tipped me off about an article in our local paper.

Nutty lentil loaf was a hit-it just stuck to the pan. I'm thinking some foil will fix that for Eatser, though. :teeth:
 
Hello! Tonight we are having a wonderful salad and deep dish pizza from one of my favorite takeout places.

Well it sounds like the not so major snow storm might just be a pain in my rear. They are talking around 8 to 10 inches by early saturday morning. I really hope Loir is not in Detroit since they get our weather when we are done with it.

Today feels like it should be a friday.

We used to get dairy delivery too. Now, we have a local farm that stocks the milk in the dairy case at my closest grocery store, so I just pick it up myself. I never buy their chocolate milk because it is too good. It is like drinking a chocolate frappe, but without the brain freeze.

The haircuts went great. Poor Liam, though. He was the only boy in the house, and eventually, all the girls ganged up on him. When we got home, I gave the kids each a cupcake and a scoop of ice cream. Liam said, "Mom always surprises us...usually with food." :laughing:
