What's for dinner at your house tonight?

Well, I think I am going to have to fall back on spaghetti because I am busy packing. (You have to say that last part in a snooty voice.)

Tomorrow, I don't know--depends on how far in the drive we are but probably fast food of some sort........

DD is not going to be happy with that spaghetti, and I think I would rather get take out but I have to save my $$ for Mickey bars :cool1:

Oh! How exciting!! Have a great time!!! Dish out your speghetti in a dish (instead of a bowl) & make it in a Mickey shape! I do that when I make angel hair pasta (sometimes) when my little guy whines that we're having pasta! I don't know how you'd do that with Penne or those type of noodles but it's easy with speghetti or especially angel hair pasta!
 
Burritos (ground turkey, spices, black beans, cheese, lettuce, salsa, all in wheat tortillas) and a salad.

You bet. We saw this on one of the Travel Channel specials. They use vintage Betty Crocker recipes on their menu. Just so happens I inherited one from my Grandmother.

1 4-5lb roast (we use chuck, but any kind works)
1 can cream of mushroom soup
1 envelope Lipton onion soup mix

Put Roast in 9x13 inch glass baking pan.
Pour soup over roast. Dump onion soup mix over top of that. Cover with foil and bake 1 hour per pound at 350 degrees.

If you want to do this in the crockpot, it usually takes 8 hours on low and comes out just as good.

Of course, I have to fool with every recipe that I get, so I add 1/2 cup red wine (merlot). I've also added garlic and just about every other thing you can think of to this. It always come out great!
 
Thanks Tink! I am always trying to "tweak" my roast recipes. That sounds very good - and to have it cook for 5 hours it must smell and taste SOOOO good! I know that I loved it when I was at the PTC! :)
 
Anytime! The only bad thing about cooking it in the crockpot is that you smell it as soon as you walk in the door and suddenly you're STARVING!

Can I ask - how long does it take you to drive there from here? And which route do you suggest? I would love to do this someday!
 
We're having artichoke and goat cheese stuffed chicken breasts w/ green beans.

I defrosted some chicken and dumplings; will probably serve w/ sweet potatoes I made yesterday. Didn't feel like cooking!

I'm also making tuna casserole tonight. I use the recipe from Betty Crocker:

TUNA PASTA CASSEROLE
Crumb Topping (2/3 cup crushed corn flakes or dry bread crumbs and 1 TB butter melted--mix ingredients) or 2/3 C crushed potato chips
1 1/4 C uncooked medium pasta shells or elbows (5 oz)
2 TB butter
2 TB flour
3/4 tsp salt
2 C milk
1 C shredded sharp process American or Cheddar cheese (4 oz)
2 C cooked broccoli flowerets or 1 C frozen (thawed) green peas
2 cans (6 oz each) tuna in water, drained

1. Heat oven to 350. Make Crumb Topping; set aside.
2. Cook and drain pasta as directed on package.
3. While pasta is cooking, melt butter in 1 1/2 quart saucepan over low heat. Stir in flour and salt. Cook over medium heat, stirring constantly, until smooth and bubbly; remove from heat. Gradually stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in cheese until melted.
4. Mix pasta, broccoli, tuna and sauce in ungreased 2-quart casserole. Cover and bake about 25 minutes or until hot and bubbly. Sprinkle with topping. Bake uncovered about 5 minutes or until topping is toasted.


It's pretty easy and DH and I like it. I use peas, but I use the entire 16 oz bag instead of just 1 cup.
 
Black beans with lots of garlic, onions, and cumin on top of rice and a salad.
 
DD had oatmeal and grapes. I'll probably have a hot pocket or some french fries. Aren't you jealous? :teeth:
