Lentils & Pasta

This recipe is similar to the one I posted above for peas & pasta. It's another Italian comfort food dish and can be spread to serve many.

1 small onion, chopped
1-2 cloves garlic, chopped
1/4 cup carrots, chopped
1 can lentil soup
EVOO
Oregano
Parsley
Salt
Black pepper
Crushed red pepper
Pasta (any type)

Place water in medium pot and cook pasta until al dente. Be sure to salt the water when cooking. In medium to large frying pan, heat two tablespoons of oil and then add carrots. Cook over medium heat until almost tender. Add onions and garlic to brown. Stir in lentil soup and bring to a boil. Add seasonings and lower heat. Continue cooking until pasta is ready and then toss together. Garnish with more crushed red pepper (if desired) and Parmesan cheese.

You can also make this dish using fresh lentils, a bay leaf, and more seasoning.
 
Pretzel chicken (need to work on recipe...trying various ways to lower its fat), dijon-cheese hot habanero dip (experiment), oven roasted russet and sweet potatoes (thin sliced and tossed with spices plus olive oil, and vegetables.
 
Having a dinner party for 3 other couples next weekend - One doesn't eat fish, I dont eat red meat but everyone else does. I want something easy I can do ahead pretty much and enjoy the cocktail hour - Sooo thinking about Giada's Short Ribs with Orchecciette pasta (I've made it before and everyone loved it, I did put the sauce on the pasta) - what do you think or suggest?
 
Sounds good to me. If you would like to make a chicken dish, the following recipe is delicious...my husband LOVES it. :)

Chicken Marbella

Chicken ( I use chicken breasts, but you could use any pieces)
½ head of garlic – pureed
2 tsb.oregano – salt & pepper
¼ cup red wine vinegar
¼ cup olive oil
¼ cup pitted prunes
¼ cup green olives
¼ cup capers
3 Bay leaves
½ cup white wine
½ cup brown sugar
2 Tsb Parsley

1. combine top ingredients in large bowl, marinate overnight in fridge.

Oven 350.

Place chicken in large baking dish, spoon marinade over.

Pour white wine over chicken, sprinkle brown sugar over all. Bake for 50-60 minutes

How'd you make the chicken, Belle? It sounds reaaaally good.

Healthy Baked "Fried" Chicken

Chicken breasts
Cornflake cereal, crushed
Margarine or butter
Sour cream
Paprika
Salt
Black pepper
Onion powder

Heat oven to 350. Clean, pat dry, and pound chicken breasts until thin. Season chicken with salt, pepper, onion powder (or chopped onions), and paprika. Coat chicken liberally with sour cream. I used the fat free variety, but any kind will work. Crush cornflake cereal in a bowl (I used Special K) and dip chicken in cereal to coat. Cover the opposite side with sour cream and repeat. Place in a greased baking pan and drizzle melted margarine or butter on top. I used fat free butter spray. Cook for one hour or until juices run clear.

FYI, your house will smell wonderful while this is baking!! :)

My husband just made Walt's recipe for chili from an older version of Chef Mickey's cookbook. The recipe called for pinto beans versus kidney and I am not a big fan of pintos. It was okay, nothing to brag about. I think the kidney beans probably would have been better.
It is also a boat load of chili.
 
Made a super quick and easy Shrimp Scampi tonight. I think the original recipe came from allrecipes.

2 lbs. medium raw shrimp, shelled and deveined
1 cup butter
1 tbls. lemon juice
1 tbls. chopped garlic
1 tbls. parsley
2 tbls. Dijon-style mustard

Preheat oven to 450 degrees.

In a sauce pan over medium heat, combine butter, mustard, parsley, garlic and lemon juice. Remove form heat when butter melts completely.

Arrange shrimp in a baking dish. Pour the butter mixture over the shrimp.

Bake for 12-15 min. until shrimp are pink.

I served it over spaghetti, with bread and a salad.
 
Nikki-- I mostly used Rachel Ray's recipe as a basis. I used mustard/egg on the chicken before rolling it some crushed pretzels and 400* degree oven. I'm hoping to try it again soon with some more tweeks.

Hi Everyone! Since a lot of us are snowed in with not much to do, why not cook? I just want to tell you about this AMAZING and EASY recipe my friend Caroline and I came up with over the holiday break. I guess you could call them crescent pinwheels, but they're more like cheesy little bits of heaven, LOL.

First, take a Pillsbury refrigerated Crescent roll and pop it open. Lay it out flat on a baking sheet, but don't separate the triangles; you want the big rectangle that it rolls out in.

Next, spread a moderately thick layer of Boursin garlic and herb cheese on the rolled out dough. Then, sprinkle some freshly fried up bacon (I think using the Oscar Meyer recipe pieces works well if you brown them in a pan with some pepper) and FRESHLY chopped chives on top. Using dried out old chives won't taste very good, trust me... :rolleyes:

Roll up the dough, cover it in Saran wrap, and leave to chill in the fridge for a few hours. When it's ready, take it out and cut the rolled up "log" in to 1/4 inch pieces and lay flat on a greased cookie sheet. Bake the pieces in a 475 degree oven for 10-15 minutes, or until golden brown.

Wait for them to cool enough so they come off the sheet in one piece. Even if you grease the sheet a lot, they tend to stick.

They're SO good, and make a really good party appetizer, so make a LOT!

Easy Wonton Soup

6 cups chicken stock/broth
1 teaspoon chopped garlic
1 teaspoon chopped ginger

Combine and bring to a boil. Once a boil is reached, reduce to a simmer and add 1/4 cup green onions and 1/2 cup baby bok choy - whites and light green parts. While that is simmering, make wontons.

1/2 lb ground pork
1 teaspoon chopped ginger
1 teaspoon chopped garlic
4 tablespoons soy sauce
1 egg yolk
1 package wonton wrappers

Combine everything and put 1 teaspoon meat filling in the center of each wonton wrapper. Using water, wet two sides of the wrapper and fold over in the shape of a triangle. If you want a traditional "wonton shape" fold the corners in and seal with water.

When the wontons are finished, bring the broth and veggies to a boil. Drop in wontons. Soup is done when wontons float to the top of the broth.

A few notes.....

You can find a tube of ginger in the produce section of the grocery store. That's also where wonton and eggroll wrappers are found in our store.

If you want a spicy filing for your wontons, add chile flakes or a chile paste. Also, wontons can be fried and eaten as an appetizer.

If there is wonton filing left, it is awesome in fried rice!

I chilled the dry ingredients, used almost frozen butter and the liquids were chilled to the point of slushiness. Whirred in the fp,30 min. refrigerated rest,lightly kneaded and patted into a rectangle, brushed with egg wash (yolk,milk,vanilla sugar and cardamom)
These are the lightest and most delicious scones I've ever made or eaten
