That HAS to be a typo unless sweet potatoes are high calorie.

I think the nitrition breakdown is for the ENTIRE recipe, that makes sense.

Some of these pineapple dishes look really yummy!

I am not a very good cook either, my mom really never was (she has gotten better over the years though). I have had the same problem with "day of" dishes. But as far as potatoes go, I have started making cream cheese/sour cream mashed potatoes that you can make the day before and refrigerate and then heat up the day of. It not only saves time but then you can taste if it they are not right you can fix without being pressured for time (but really there is no way to screw them up!!)
