Husband and I have one free, kidless day on Monday. We will probably get to WDW around 2 and have reservations for artist point at 5. I probably won't be able to talk him into a park, and we have a 45 minute drive home that night, but don't have to be home at any particular time. What else should we do before and/or after dinner???

Play a round of Fantasia mini-golf after dinner, when the sun has set & it's cooler out. It's very nice.
 
Boat to Ft. W and/or CR. From CR, take the monorail around the resorts. If you get to the Poly around 3/3:30 pm, get in line for Trader Sam's and get a drink!
 
You could park at Disney Springs, check it out, then head over to WL for dinner, then after dinner, you head back to Disney Springs maybe catch a movie or just wander around and listen to some music, shop...
 

book a value room if one is available or a cheap room near Disney and make a night of it if you can
