What would my check in day be in this scenario?

Flight from CA to MCO arrives at 1:55AM. If I stay at a Disney resort using DME, what day is my check in?

What if I stay at the Hyatt MCO when I arrive instead? Same question.
 
If you want a room to sleep in the early hours of that morning, it is the night before. Otherwise check-in is 3 pm that day with a possibility of getting a room earlier but not before 7 am.

Any other hotel would be the same as check-in is always in the afternoon.

I read in these forums that a new check in day starts at 6:30 am for Disney Resorts. Of course that doesn't mean your room would be ready, and you might not get in your room till 4pm. If you decide to stay at the airport Hyatt, DME will still take you to your Disney Resort in the morning.
I don't know what the Hyatt time is. Best to call Disney and the Hyatt to find out for sure before you make a plan.
 
Thanks. I do want to be able to get into the room immediately to sleep since 2am is 11pm to me and my normal bed time. Just wanted to be sure my reservation wouldn't cancel if I don't check in by midnight...

Your reservation will not be cancelled, we always arrive late (1 or 2am) because, for us, we found it much better to wake up already in our resort room then to stay a few hours at another hotel and then go and check into our WDW resort.
 
We didn't arrive at our hotel until 2am last year. We had no problems, and it was nice getting our room number ahead of time so we didn't have to stop by the check-in desk. I would recommend doing online check-in and there is an option to put "After Midnight" as your arrival time. If you don't do online check-in, I'd call the resort and have them note your late arrival in your reservation. Better safe than sorry!

When booking flights, the cheapest flight didn't arrive until 1215 am. I went back and forth on what to do for awhile. Should we stay at the airport, should we just do a value for one night? We decided to splurge a little and just stay at the same hotel the entire trip. It was actually cheaper than flying in any earlier, so that's pretty much how I justified it. And it was nice to not have to be up and out of the room by 11am. We knew we would want to sleep in since we got in so late, and we did. By the time we went to bed it was probably after 3 am. I woke up first and I thought it was still the middle of the night (great curtains at AKL). It was almost noon! Glad I woke up when I did, we had an ADR at 130!

All hotels have a check-in time starting some time in the afternoon, and a check-out deadline late in the morning. Hyatt check-in starts at 4 PM, and checkout is by noon. All guests arriving in the middle of the night - not just Hyatt, or Disney - need to reserve as if they were going to arrive right at check-in time, whether that's earlier the same day or even (as with the OP) the calendar day prior.

Keep in mind that there will be no restaurants open. Plan on ordering out or packing food along with you if you think you will be hungry when you arrive.

Yeah, I thought about that, but it won't be a problem. My flight leaves CA at 3:30 pm, so I will have had lunch. It has a layover that is enough time to grab something for dinner.
