What to serve on Christmas Morning?

Breakfast Tacos ...

Do as much as you can the night before ... brown the hash browns, crumble/cook the sausage, make bacon ... then in the morning all that has to be done is make scrambled eggs and assemble the tacos with what everyone wants on them... add the cheese and put in the micro for 15 - 20 secs.. EASY ...

Add a fruit salad and coffee cake or sweet rolls...

We have breakfast tacos a LOT here ... though usually for Christmas morning I do some sort of casserole / the Monkey Bread and fruit ... Coffee and Orange Juice...
 
We do a waffle bar with different toppings (whipped creme, chocolate, strawberries, cherries, blueberries, etc etc etc) My husband travels alot and everytime that we went with him, the kids loved the waffle maker that you pour the stuff in, close the lid, flip it over and beeps when done. So a few years ago, this was one of the family gifts from Santa. So ever since then we do this on Xmas morning.
The day before I cook ham, sausage, & bacon (we always have one that doesn't like what the other two do) these get popped into the oven in the morning. I also put all the toppings into different containers that can either be put into the oven to warm while opening gifts or just popped onto the counter.
We use disposable plates and silverware (hey, it is mom's holiday too) for the entire day.

Forget recipies...here is easy (it is what my parents did for me, and now me and siblings do it for ours)
Throw poptarts or donuts packs into the stockings with a banana and a packet of hot cocoa. Breakfast is served.

Well...we were originally going to do our traditonal thing...I bake Pepperidge Farm blueberry turnovers the night before..then we warm them up Christmas morning and serve with whipped cream...But this thread has inspired me to try something new. ;) I will be making gingerbread pancakes & our favorite Maple Cider cured Carando bacon. :lovestruc
 
I always make a cranberry coffee cake (the day before), hashbrown casserole (I put it together before bed) and the frozen Stouffer "Holiday" fruit (apples and cranberries) that you microwave and serve warm! When we get up I pop the casserole in the oven and then a little later, put the fruit in the microwave! It is quick and easy (and good)! And is done by the time we are through opening gifts!:rotfl:
 
Shoot I just buy Pilsbury Cinnamon rolls the kids LOVE it, and it's easy for me....and heck we have a BIG dinner and it's early...no need to fill up here.
 
I have never heard of sausage balls until this thread (it sounds like it's a Southern thing?), but I mentioned them to DH and he started drooling. So, it looks like we are going to try some sausage balls! Mmmm. Other than that tradition dictates that we must have huge amounts of bacon and usually scrambled eggs and orange juice, fruit, and cinnamon rolls.
 
I'm doing an overnight French Toast casserole as well as an egg, sausage and cheese one. I refuse to cook a huge breakfast and mess up my kitchen hours before I have to cook a big dinner and make a mess of my kitchen :rotfl:
 
yummy and quick egg dish:

7 eggs
1 lb cottage cheese (small curd)
1 lb shredded montery jack cheese
4 oz cream cheese
2 tsp sugar
1/2 cup flour
1 tsp baking powder
1 cup milk
1-2 tsp chives
1/4 cup butter (melted)

mix eggs and cheese together with mixer; add butter,sugar & milk and mix well; add flour, baking powder and chives. Place in greased baking dish and cook at 350 for 1- 1hr 15min. may prepare the night before and refrigerate.

I put out bacon and sausage as my side dishes and cook up some bagels/toast.
 
Had to bring this one back and thank all for a lovely breakfast we will have.

Done the night before and cooking while we open presents.

I started this same thread last year. How fun to see it again this year. :thumbsup2

My boys will be up EARLY on Christmas morning, and my Mom will spend the night with us to see the boys open their gifts.

We will have sausage balls, Sister Shupert cinnamom rolls, and COFFEE!

My inlaws will come over later in the morning, and we will have brunch..... egg and sausage casserole, ham and biscuits, monkey bread, fresh fruit and poinsettias (champagne with cranberry juice.)
 
what is something quick and easy I can serve

"recipes" in general are not what I call quick and easy. Premade delicious and pretty food is available everywhere this time of year. Muffins, bagels and cream cheese, coffee cake, even donuts - coffee/tea/hot cocoa, with a pitcher of OJ. Easy schmeasy.
 
Our Christmas morning menu

OJ/Coffee/hot chocolate
Fruit tray
Danish (ordered from our favorite Danish bakery in Racine WI)
Egg/Sausage Casserole (prepared the day before)
Oven Baked French Toast (prepared the day before)
Bacon (cooked the day before)
Hash Browns

I ususally fry the hash browns in the morning but this year I am trying this recipe.


Parmesan Hash Brown Cups

Servings: makes 12

Ingredients

•1 (20 oz) bag Simply Potatoes Shredded Hash Browns; OR 3-1/2 cups shredded russet potatoes, rinsed and squeezed dry in a towel
•3 green onions, chopped (approx. 1/3 cup), both white and green parts
•1/2 cup grated Parmesan cheese
•1 teaspoon kosher salt
•1/2 teaspoon black pepper
•2 tablespoon olive oil

Directions

Preheat oven to 350 degrees. Coat 12 muffin tins with cooking spray; set aside. In large bowl, combine potatoes, onions, cheese, salt, and pepper. Toss lightly with a fork. Drizzle on olive oil. Toss with fork again until mixture is well combined. Spoon mixture evenly into 12 muffin cups. With the back of the spoon, apply gentle pressure to pack mixture into each cup. Bake for 60-75 minutes in lower third of oven. Let rest for 5 minutes, run a small knife or spatula around the edge of each cup, making sure the edges are loosened. Gently lift each potato cup out, invert it, place on serving plate bottom side up. Good served warm or room temperature.

MAKE AHEAD FOR COOKING LATER: Combine mixture, spoon it into muffin tins, cover with plastic wrap, and refrigerate until ready to bake. Remove from fridge 30 minutes before baking time. May be made the night before to cook and serve for breakfast the next day.

MAKE AND COOK AHEAD FOR REHEATING LATER: These are best when eaten freshly baked. However, they can be baked ahead of time, refrigerated or frozen, and reheated before serving. They lose some of their crispiness when reheated, but the texture and taste is still good.

FOR BITE-SIZE TATER TOTS - make them in mini muffin pans.

SERVING SIZE = 1-2 hash brown cups per person
1 hash brown cup = 2 Weight Watchers PointsPlus
 
Ours is a little more work, but not much. We make, English muffins a bunch of scrambled eggs and then bacon, ham and sausage and have cheese so everyone can have what they want wth their eggs. OJ and milk for drinks. You could probably do the eggs and sausage and bacon the night before the just have to warm them up in the morning.
 
How about Eggnog French Toast? Make it the night before and pop it in the oven Xmas morning.

6 eggs
8 slices 1 inch bread (I use Texas Toast)
1/3 cup sugar
2 cups eggnog
1 teaspoon nutmeg
1/2 teaspoon cinnamon
2 tablespoons butter

Place bread in a single layer in 13x9x2 pan (I use disposable pans because it does stick and makes cleanup a breeze). Whisk eggs and all other ingredients together. Pour over bread, turn slices to coat. Cover with Saran Wrap and refrigerate over night.

Preheat oven to 400 degrees. Bake 10 minutes, turn slices, bake an additional 10 minutes or until golden brown!

This has been a family favorite for years!!!
 
Love this thread. We will do the French Toast Casserole, also a pre-made store bought coffee cake and cranberry bread.
Maybe DH will do some eggs for each person (some like scrambled, other sunny side up) and the bacon in the microwave.

Love the recipes and idea's.

We do 4pm Mass on Christmas Eve, so we have Christmas day for presents and food.
