What to serve on Christmas Morning?

We always have sausage balls and pigs in blankets on Christmas morning.

Interesting, I have never heard of sausage balls or pigs in a blanket for breakfast. We usually have sausage balls New Years eve and pigs in a balnket for dinner with mac and cheese. Please tell me you use sausage for your pigs in a blanket.

Could somebody post a hash brown breakfast casserole recipe? That sounds like a great idea. I would love to not be cooking at the stove frying eggs while everyone else is eating!:santa:
 
We like to take a Smithfield ham and rolls and make little ham biscuits in the morning.
 
You can also make a "Christmas" quiche - pretty much regular whatever you want in it but add red & green peppers. We've done sausage & swiss quiche w/the peppers & DH loves it.

Casseroles or other baked treats are the way to go - you can even bake bacon, just so you're not cooking while everyone else is relaxing!
 

We do toasted pannetonne with fresh berries in syrup with double cream.
I also put a fruit platter for people to pick at while we are doing the presents. Mind you I'm in australia so we are in the middle of all our yummy summer fruit.

ok maybe its just late where i am but what the hairy heck is a sausage ball??? is it just a ball of sausage intstead of a link? maybe its an easier anwser then im thinking but i hate to assume.

oh and my 2 cents on what to have for christmas morning breakfast.....cinnabon! after a long night with my hubbys family, then an early morning at our house...i have no energy to cook and i know we will be having a big family dinner at 2 in the afternoon so i dont want to fill us up too early.

and i use the excuse thats "its christmas"....when else can I eat days worth of calories in a matter of 2 minutes and not feel quilty?

oh wait....its called christmas dinner :rotfl:

Sausage balls are a Christmas morning tradition here too! Of course, I'd eat them anytime.

Nope - its a recipe from Bisquick. Three cups of Bisquick, 1 pound of breakfast sausage (I use Jimmy Dean Hot) and two cups of shredded cheddar cheese. Form into a dough then roll into balls. Bake at 400 for about ten minutes. YUMMY! :goodvibes
 
Last year I made the WDW (Main Street Bakery) French Toast Loaf because everyone raved about it. You would need to search the Dis for the recipe because I'm too tired and lazy to look it up.:goodvibes It was delicious!!! Made the night before, we just popped it in the oven when we got up and ate it after presents.

We actually paired this with fried eggs and bacon our traditional Christmas morning meal.
 
My DD makes the best tasting cranberry bread (and I hate cranberries). She makes it a day or two before and we just nuke it Christmas morning so it is warm.

We also have yogurt parfaits. We layer fresh fruit, granola and yogurt in wine glasses. It looks "fanciful" as my kids say and tastes delicious. My son is allergic to soy and dairy so he can't have yogurt. He gets to have an ice cream parfait. I use a sorbet that is safe for him along with the fruit and granola. It is the one breakfast the kid looks forward to all year!

This is what I was going to suggest. This is what we usually will have.

I always make a baked French Toast Casserole. It's made the night before, in the morning just sprinkle on the topping and pop in the oven. I then just scramble some eggs and microwave some bacon.

This Recipe serves about 10.

1 loaf French bread or any favorite type of bread
8 eggs
2 cups half-and-half
1 cup milk
2 tablespoons sugar
1 teaspoon vanilla
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cup butter
1 cup brown sugar
1 cup pecans
Place sliced bread in 2 large baking pans that have been sprayed with PAM.
Mix eggs, half and half, milk, sugar, vanilla, and spices.
Pour over bread.
Refrigerate overnight.
The next morning combine the last 3 ingredients and put on top.
Sprinkle with cinnamon and nutmeg and bake at 350 for 30 minutes or until done

This sounds yummy.
 
My DD always expects Chocolate Chip pancakes!:thumbsup2

You could do waffles and a waffle topping bar (walnuts, bananas,cinnamon apples etc.):cutie: and some scambled eggs.

I always cook the bacon and sausage a day or two earlier and the just warm them up on Christmas morning.

I always prepare a breakfast casserole the night before. It has to chill overnight, so it's perfect to just throw in the oven. It's the sausage, cheese, egg kind. I've also seen a grits, etc recipe.
OK, I thought my mom was the only one who did this. Hers had a Bisquick crust of some kind.

Every Christmas morning we have the same dish, and it's very easy to make in big batches. It's just eggs, cream cheese, chedder cheese, onions, green peppers and sausage all cooked together.

We actually throw most of it in the microwave to cook, it's that easy.
 
These have all been favorites over the years:

Sausage Pinwheels

1 tube refrigerated crescent rolls
1/2 pound uncooked bulk pork sausage
2 Tablespoons minced chives

Unroll crescent roll dough on a lightly floured surface; press seams and perforations together. Roll into a 10x14-inch rectangle. Spread sausage to within 1/2 inch of edges. Sprinkle with chives. Carefully roll up from the long side; cut into 12 slices. Place 1 inch apart on an ungreased baking sheet. Bake at 375 degrees for 12-16 minutes or until golden brown.


Cream Cheese Coffee Cake Bars

1 package (8 oz) cream cheese, softened
1 cup sugar
½ teaspoon vanilla
1 egg yolk
2 tubes refrigerated crescent rolls

Beat first 4 ingredients until smooth. Lightly grease 9x13 pan. Press 1 tube of crescent rolls in bottom for crust. Spread cream cheese mixture over crust. Place other tube of crescent rolls over top. Brush top with egg white; sprinkle with cinnamon and sugar. Bake at 325 degrees for 40 minutes.

*Can also add a can of pie filling (any flavor) on top of cream cheese mixture before adding top crust.


EGG BAKE

Spread 2 cups frozen hash brown potatoes in the bottom of a 9x13
baking pan that has been sprayed with non-stick spray.

In a food processor, grind together 3 cups ham, 2 Tablespoons onion and 2 Tablespoons green pepper-Spread on top of the hash brown potatoes.

Beat 12 eggs and 2/3 cup half & half-Pour on top of meat mixture. Top with 1/2 cup shredded cheddar cheese. Cover and refrigerate overnight.

Bake 1 hour at 325 degrees. (You can cover with foil before baking, but remove during the last 15 minutes.) Let set a few minutes before cutting. May top with additional shredded cheese if you like.
 
the best thing is that you can make it the night before & then pop it in the oven in the morning!

Praline Baked French Toast
6 tablespoons Butter
1 cup Light Brown Sugar
2 tablespoons Light Corn Syrup
1/2 cup chopped Pecans
2 Eggs, plus 3 Egg Whites
1 cup Orange Juice
1/4 cup Sugar
1/3 cup Milk
1 teaspoon grated Orange Rind
1/2 teaspoon Cinnamon
1 teaspoon Vanilla
1 (16 oz) loaf French Bread, cut into 12 to 15 (1 inch) slices

In a microwaveable dish, combine butter, brown sugar & corn syrup. Microwave until the butter has melted & the brown sugar is dissolved, about 1 minute. Pour the mixture into an ungreased 3 quart oblong baking dish or a 13 x 9 inch pan. Sprinkle with pecans.
In a large bowl, whisk together the eggs, egg whites, orange juice, sugar, milk, orange rind, cinnamon & vanilla.
Arrange the bread slices over the brown sugar mixture & pecans in the dish. Pour the egg mixture over the bread slices. Cover & refrigerate for at least 4 hours to overnight.
Preheat the oven to 350 degrees.
Bake for about 30 minutes or until toasty. Serve immediately, each piece with some of the praline sauce that forms on the bottom of the dish.
 
Wow, some of these casseroles sound wonderful! I think I'll have to try one of those that you can make the day before, that would be HEAVENLY to not have to worry about in the morning! :D
 
Christmas morning we always do bagels, lox, baked salmon, butter , different flavor cream cheeses. Its quick and easy.
 
This is what I'm doing Christmas morning:

Sour Cream coffee cake
Fresh fruit platter
2 Mushroom/Brocolli Quiche
Hashbrown Casserol
French Toast (that is prepared the night before)
Sausage/Gravy and Biscuits (for my Dad ;) )

What I love is everything can be prepared the day before. Just pop in the hashbrown casserol & french toast Christmas morning and heat up the quiche and sausage gravy.
 
Here's another hash brown breakfast bake. This is one we've been doing for years (my DH hates the idea of wet bread- he's had too many egg bakes that weren't quite done and a little runny, so the bread egg bakes are out for me) I usually substitute ham for the sausage and skip the salsa.

Country Breakfast Casserole

Ingredients
2 (12 ounce) packages frozen hot pork sausage, thawed
1 (2 pound) package frozen southern style hash brown potatoes
2 (8 ounce) packages shredded colby-jack cheese, (4 cups), divided
1 medium onion, minced (1 cup)
2 cups milk
1/2 teaspoon salt
6 eggs, slightly beaten
1 (12 ounce) container salsa
Directions
In medium skillet, brown sausage; drain. In large bowl, combine sausage, hash browns, 3 cups cheese, onion, milk, salt and eggs. Pour mixture into greased 9x13 inch glass baking dish. Top with remaining cheese. Refrigerate, covered, several hours or overnight. Bake, uncovered, in a preheated 350 degree oven until knife inserted in center comes out clean (50-55 minutes). Let stand 10 minutes, covered; cut into squares. Serve with salsa.
Amount: 8-10 servings
