What to serve as a side with a spiral ham?

We're also having meatballs, bread, shrimp platter and cheese/crackers.

But shouldn't I serve a complimentary side dish to the ham?

What do you think?

I always make cheesy potatoes.

Hashbrowns
shredded cheese
sour cream
cream of whatever soup
mix togther and bake.

I always make scalloped potatoes, too. I have an easy recipe for the microwave that everyone loves. It is so much faster than baking in the oven. I also make the green bean casserole with the mushroom soup and french fried onions.

Microwave Scalloped Potatoes

3 Tbs. butter
2 Tbs. flour
1 tsp. salt
1/4 tsp. pepper
3 cups milk

Place butter in 1 qt. measuring cup. Microwave at High for 30 seconds or until melted. Blend in flour and seasonings. Gradually stir in milk. Microwave on High 8 - 10 min., stirring every 3 minutes.

3 1/2 cups thinly sliced white potatoes. (I usually use 12 -14 small to medium potatoes.) Use just enough potatoes to be able to cover with the sauce.

Layer half of potatoes and sauce in a greased 2 qt. casserole. Repeat layers. Cover and vent. Place casserole on paper towels in case of boil over.

Microwave on High 20 min, then stir. Microwave on High another 10 min and stir again. Check to see if done. I usually have to microwave another 10 min. until they are done.
 
My family thinks we must have carrot/raisin/pineapple salad and sweet potatoe casserole with ham.

I do have a question. From the description of what you are serving I get the idea it isn't a sit down meal. If you want finger foods I think I would just do a veggie/dip tray.
 
Sha_lyn - oh sorry..yes you're right, not a sit down. Just a few family members.

Maybe I will include a veggie tray as well, but really, nobody coming will eat much of it if at all (past experience tells me this). Your casserole sounds yummy!

All these potato recipes sound SO good! I think I'll try one of these too.

If they won't eat veggies and dip I think I'd go with a carrot or broccoli salad


a good semi finger food is individual broccoli cheese quiches/puffs.

2 boxes frozen chopped brocolli (or sometimes I do one of brocolli and one of spiniche)
2 cups grated pepper jack cheese
3 eggs
1 cup flour
1 tsp baking powder
1 tsp salt
1 cup milk

The recipe I have calls to mix all but the cheese togehter and them top with the cheese, but the first time I made it I misread and added the cheese, I liked it that way and haven't tried it wiht hte cheese on top

bake @350 for 40-45 min.
This is time for a large baking dish but I prefer it in mini muffin pans. The texture seems better because the middle of the casserole dish stays a bit too wet if you don't overcook the edges.

It takes about 35 min in the mini muffin pans
 
My cousin made a recipe similar to the one below and it was very tasty. It would go well with ham.



Scalloped Pineapple

1/2 cup melted butter
1 cup sugar
1/2 cup milk
4 cups soft bread crumbs
3 beaten eggs
28 oz. can crushed pineapple, undrained

Mix first four ingredients. Add the eggs and pineapple, stir until blended.

Bake in a casserole dish at 375 for 45 minutes, until golden brown.



Here's the recipe for the famous potato casserole served at Cindy's Royal Table:


Cinderella’s Au Gratin Potatoes

1/4 t. garlic salt
1/4t. white pepper
1/2t. salt (optional)
3 cups milk
1 cup mild and shredded cheddar cheese
4 cups diced and cooked potatoes
1/2 cup flour
1/2 cup fresh and cooked bacon bits
1/2 cup diced onions
1/4 cup melted butter

Preheat oven to 350 degrees F.

Dice and cook the potatoes. Dice onions. Gather remaining ingredients.

Melt butter. Add onion and saute. Add bacon and cook for 2 minutes. Add flour and stir to make a paste. Cook for 5 minutes.

Add 3 cups milk. Stir till lumps are gone. Cook mixture 10 minutes and continue stirring. Add potatoes, cheese and seasonings.Mix until cheese is melted.

Bake at 350 for 10 minutes.Serves 6.

This can be prepared early and frozen or refrigerated.

AS a dinner I almost always do plain old mashed potatoes and candied carrots with the spiral ham - yum
 
Thanks for posting this - I'd been meaning to do it myself.
I am thinking of corn pudding, green beans, & some type of potato dish - and of course dinner rolls.
