Sauerkraut Apple Cake recipe
4 eggs
1 cup granulated sugar
1/2 cup packed brown sugar
1 (14 ounce) can sauerkraut, rinsed and drained
1 large tart apple
1 cup vegetable oil
1 cup chopped walnuts
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground nutmeg

In a large bowl, beat eggs and sugars; set aside. Squeeze sauerkraut until dry; finely chop and add to egg mixture. Peel and finely grate apple; squeeze dry. Stir into egg mixture. Add oil and walnuts. Combine flour, baking powder, cinnamon, baking soda, salt and nutmeg; stir into egg mixture. Line the bottom of two 8-inch round cake pans with wax paper; grease and flour paper and sides of pan. Pour batter into pans. Bake at 350 degrees F for 35 to 40 minutes or until a wooden pick inserted near the center comes out clean. Cool in pans for 10 minutes before inverting onto a wire rack to cool completely before frosting.

Cream Cheese Frosting:
8 ounces cream cheese, softened
2 to 3 tablespoons whipping cream, divided
4 1/2 cups confectioners' sugar
1 tablespoon grated orange peel
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
Chopped walnuts (optional)

Beat cream cheese and 2 tablespoons cream in a small mixing bowl. Add sugar; beat until fluffy. Add orange peel, cinnamon and vanilla extract; mix well. Add remaining cream if needed. Spread between layers and over entire cake. Garnish with chopped walnuts if desired. Store in the refrigerator.

Yields 10 to 12 servings.
 
It's nice with cabbage rolls too. <sigh> It's been some time since I've eaten that.
 
I am the only one in my family that likes sauerkraut and I found small single size packets of it in my grocery store! I can't remember the brand but the package was green and white and they were in a cardboard stand by the hot dogs. I think they are only there in spring, summer and fall if I remember correctly. They aren't in the store right now I don't think. I haven't looked for them for awhile. I would stock up on these and use them any time I wanted sauerkraut on anything. Especially good for camping!

SAUERKRAUT BALLS

1 lb. sausage(cooked and drained)
1/4 c. chopped onions
1 (14 oz.) sauerkraut (shredded)
1/2 c. bread crumbs (enough to roll balls in)
8 oz. cream cheese (softened)
1/4 tsp. garlic powder
Dash of thyme
1/4 c. flour
1 egg (enough for mixture)
1 tsp. prepared mustard
1/4 c. milk
1/8 tsp. black pepper

If this is an appetizer we order it! Yum! You can make them ahead, fry them slightly, freeze and toss in the oven later.

Cook sausage and drain, then saute onions and sausage and drain. Drain sauerkraut and add bread crumbs. Combine garlic powder, cream cheese, mustard and pepper then chill. Shape into 3/4 inch balls, coat in flour.
Combine eggs and milk. Dip balls in mixture, roll in bread crumbs, set at room temperature. Cook in hot oil until golden brown. Serves 25. Can be made ahead of time.
 

CHOCOLATE SAUERKRAUT CAKE



Cake:

1/2 c. butter, plus 1 inch of block
1 1/2 c. sugar
3 eggs
1 tsp. vanilla
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 c. cocoa
1/2 tsp. salt
1 c. instant coffee, warmed
1 c. sauerkraut, drained in cold water and cut into very small pieces

Frosting:

6 oz. semi sweet chocolate chips
4 tbsp. OR 1/2 stick of butter
1/2 c. of sour cream
1 tsp. vanilla
2 1/2 to 2 3/4 c. confectioners sugar

Combine cake ingredients. Pour into 2 (9x9 inch) pans. Bake at 350 degrees for 35 to 40 minutes. Melt chocolate chips and butter in saucepan.
Add remaining frosting ingredients and mix well. Use only enough confectioners sugar to make the frosting be spreadable. Frost cooled cake.
