What to do with leftover Ham

i am surprised no one mentioned ham and string beans............maybe thats a little pa dutch for most of you.

YUM!!! :thumbsup2 My grandmother grew up in the Lancaster area and used to make these all the time. I don't think I've had them since she passed away almost 20 years ago. Maybe I will need to make some soon. ;)
 
Calzones:

1 Pound Pizza or Bread Dough (if bought frozen, thaw it first)
1 Ricotta Cheese
1 Cup of Diced Ham
8 oz. Mozzarella (Diced or you can use 1 cup pre-shredded)
1 Egg
2 Tablespoons Grated Cheese (Parmesan or whatever you sprinkle on pasta)
Salt and Pepper
Parsley (If you have fresh, about 1 tablespoon chopped, or a fat pinch of dried)
Olive Oil

Bring the dough up to room temperature. In the meantime, mix the other ingredients (except the olive oil) together in a bowl. Roll it out on a floured surface with a floured rolling pin. Cut into quarters. Put a quarter of the ricotta mixture in the middle of each piece of dough. Fold over and seal well by rubbing warm water around the edge.

Heat over to 350 degrees. Line a baking tray with non-stick aluminum foil. Place the calzones on the tray. Brush the tops well with olive oil. Bake for 30 to 35 minutes until nicely browned. Allow to sit for 5 minutes before serving to allow cheeses to settle down.
 
Broccoli cheese soup with ham. I usually get the Bear Creek brand broccoli cheese soup mix in the soup section and add a 1lb bag of frozen broccoli and chopped leftover ham to it. Yum. 1pkg soup + the extra broccoli and ham is enough for our family of 7. Kids love it and its a fast meal. We serve with buttered rolls or fresh bread from the breadmachine.

Some yummy ideas here. I definitely plan on making the potato soup. Right now the only ingredient I have in the house is the ham:lmao:

Ham+ Mac and Cheese: actually did this tonight a little. Took my microwave packets of the kraft and added a bit of ham to it. Wasn't bad at all.

Ham and string beans: I'm from philly, so this basically was my life growing up:lmao:

Any more ideas? Just feel free to keep on going:thumbsup2
 
With some chopped dark meat chicken, in gumbo or jambalaya. (You can do it the really easy way if you don't know much about Cajun food -- with a Zatarain's box mix from the supermarket.) You really don't HAVE to add chicken, but it's much better with both.
 
you can make cuban tamales with ham or croquettes de jamon. You can probably goodle for a recipe pretty easy.
 
I make hash out of some the leftover ham. I chop up the ham and cook it with a package of o'brien potatoes and top the finished dish with shredded cheddar.

This is served with pancakes and fried eggs and makes a great breakfast or dinner.
 
I wish I could just whip up a quicke! Yesterday I did scrambled eggs with ham and cheese. Tonight we had left over ham and mac n cheese. I put a bunch in the freezer too!

Here's the quick quiche recipe I use:

1 unbaked pie shell (though I usually do very lightly brown it before use)
3 to 4 eggs (depending upon size of pie shell)
1/2 cup sour cream
3/4 to 1 cup grated cheese
salt and pepper to taste

additional filling ingredients may include almost anything ham, chicken, asparagus, green chilis, broccoli, fresh spinach, etc.

Preheat oven to 375, place filling ingredients in pie shell until about 2/3 filled, top with grated cheese.

Using a mixer, blend eggs, sour cream and salt and pepper. Pour egg mixture over top of filling ingredients and bake until done, about 35 to 40 minutes.
 
I can try - I usually cook by just throwing things in. ;)

Potato Soup -

6 medium potatoes - peeled and cubed
Water to cover potatoes by about 1/2 an inch
4 or 5 chicken boullion cubes
1 pint heavy cream
1 cup whole milk
1 package bacon - chopped, fried and drained
2 cups cubed ham, cooked
1 - 8 oz package shredded extra sharp white cheddar
1 - 8 oz package shredded extra sharp yellow cheddar

Put cubed potatoes into large pan and cover with water. Add boullion cubes. While potatoes cook, fry bacon and drain. Once potatoes are cooked, do not drain water and add heavy cream and milk. Add cooked bacon and ham. Add cheese and stir until completely melted. Serve and enjoy!! :thumbsup2

You can also add onions, jalapenos, etc.

I have never tried this in a Crock Pot, so I can't help there. :confused3

Is that where it comes from? I thought it was a southern thang. My mom made it all the time, and sometimes she would put some small chunks of potatoes in it also. YUMMY

I honestly don't know the origin of it, but my grandmother was PA Dutch and made them ALL the time. It's pretty much on all the restaurant menus in that area, too.

If you serve black eyed peas and greens (any kind--I cook cabbage) for NY day--ham will season either.

I put some ham in the freezer to use in White Limas (soak beans overnight, cook some onion and bell pepper in oil, rinse beans, place in crock pot, cover with water, add salt and pepper, add cooked onion and bell pepper, add chunks of ham--best with a bit of fat on the chunks, let cook all day in the crock pot; serve over rice and with cornbread)

I will also freeze a bit to add to a big pot of fresh green beans with new potatoes this summer (from the garden).

We usually eat fried slices for breakfast with biscuits and at lunch on sandwiches during the days after Christmas, then freeze the rest to use throughout the year for seasoning beans or other veggies.

ETA: my kids have always liked the ham on their biscuits to have a bit of a sweet taste. When I heat it up I add a bit of water to the pan and then just a little bit of brown sugar. Have to watch it close so that the sugar doesn't burn, but its pretty good.
 
I usually grind it up with some pickle, add some mayo and make some ham salad.

I made this yesterday, and today we're having the ham mixed into scalloped potatoes. I'm also saving the ham bone for either bean or split pea soup.
