When we were first married I used to put a peeled hard-boiled egg in the middle of my meatloaf. I have no idea why - I just remember doing it. :rofl: It does look neat when sliced though.
How about just adding them chopped to your garden salad side dishes one evening? DH & DD like to take hard-boiled eggs in their lunches in addition to their sandwiches.
I usually make pickled/red beet eggs with mine, but most people think it just sounds nasty. I was raised with it, though, as I'm PA Dutch.
Oh - I don't have the recipe handy, but we also use them in Chicken Corn Soup - again a PA Dutch thing.
piratemate, if you run across the soup recipe can you get it to me? Did put the eggs in our salad last night. Not sure why I am fretting over it(just seems so wasteful) we leave on Tues so probably will go out with the trash. Thanks for the suggestions.
chicken
4 qt water (or chicken broth if not simmering the chicken)
1 onion, chopped
1/2 c chopped celery & leaves
2 1/2 c corn
2 hard-boiled eggs
salt & pepper
Rivelsoptional
1 c flour
1 egg, uncooked
1/4 c milk
Cook chicken slowly in water until tender. Remove chicken & strain broth if necessary. Take meat off the bones & cut into bite-sized pieces. Set aside. Add corn to broth & bring to a boil. Add chopped celery & seasoning. (I usually add 1 to 1 1/2 tsp ground celery seed as well.) Cook 5 min.
Five min before serving, add chicken, diced eggs & rivels. Cover & cook gently for 5 min. Serves 10.
Rivels
Combine flour, egg & milk & rub together with 2 forks until the size of peas. Drop into boiling soup 5 min before serving.
we are heading to the "WORLD" DH has to go on business & we decided to tag along. We are off site this stay(work is paying) but who cares? We are going to Regal Palms in Davenport, I hope we won't be disappointed. They have a cool looking pool. Hope I'll be able to manage the crowds by myself with our 2 DS's (4&5). It always makes me laugh when someone says "Eeeeewwwwww!!!!" They are so much better than plain old "regular" hard-boiled. They're just so blech! At least red beet eggs have some taste!
And they make much better tasting egg salad - even though it's pink!
