What to do when parks close "early?"

We going from 2/27 - 3/6. There are a few days on our schedule when the parks close at 7pm. So what to do with 2 boys 11 & 8 after 7pm? We already have a day scheduled for DQ with HDD following. I suggested to DH that we get either get a babysitter or put the boys in one of the "clubs" and go to PI ourselves, and that was a HUGE "NOT A CHANCE!!" DH has a "thing" about leaving the kids with people we don't know.

So other than just hanging at POR, doing some swimming what do you suggest?
 
You could do dinner at the ESPN club on the Boardwalk. They've got tons of sports memrobilia, and an arcade. The food is good, and reasonably priced for Disney.

After dinner you could rent a surrey bike and "cruise" the Boardwalk, or go in the back entrance of Epcot and watch the fireworks.
 
I went in August with our boys who will be 8 and 11 in a few weeks. Their absolute favorite nighttime activity was Disney Quest. We were all disappointed when it closed for the night (at midnight, though times may vary throughout the year).

Yes, it was crowded in the evenings, but not so much that it took us more than five minutes to get into a particular game.

If your boys enjoy video games, this is a sure fire winner.

EPCOT is almost always open until 9pm, so you can visit attractions, have a late dinner, and/or watch Illuminations. Downtown Disney (DisneyQuest) and the Boardwalk are a popular options, and there are two miniature golf places on WDW property. We also enjoy resort-hopping- each has its' own arcade and dining options. You don't mention whether you will have a car. If so, there are numerous choices off property too.
 

We had a great time at the campfire and movie at the campground. Just remember to take your smore fixings! We also loved the Hoop De Doo show.
 
Go mini-golfing! The courses are Disney themed, so I'm sure they would be different from the ones in your area.
 
Boardwalk is fun. You could rent a surry bike, play some of the games, and enjoy a nice dinner together. It's really a lot of fun- especially at night.

Maybe you could visit one of the Resorts. You could go to the Poly, have dinner at 'Ohannas or Kona Cafe and then stay for the Electrical Water Pagent. It's a cute little parade that I believe is usually at 9pm nightly at the Poly. It's a nice alternative for a "kiss goodnight" when the parks close early. You could also go to Animal Kingdom Lodge, have dinner at Bommas, see the nightly storytelling (don't remember what time that is, maybe you could call Guest Relations at POR before you leave for AKL to see if they can call AKL Guest Relations and find out for you), and look at the animals on the Savanah.
 
We already have an IllumiNations cruise scheduled for our first night, DisneyQuest and Hoop-Dee-Do for mid-week, and PSs (6pm) for O'Hana for our last night where hopefully we can see wishes from.

The mini-golf sounds like a great idea. I'm still going to work on DH about putting the boys in a "club" and go to PI or DTD for a while.
