What to do on last day?

We have a trip in March. Wife and I will be at the AKL. No dining Plan. Have 4 day park hoppers passes to see MK, EPCOT, AK (not much interest in DS) on days 1-4. Our 180+ ADR window just opened. I have arranged the following:

Day 0 (arrival late afternoon): Dinner at Sanaa 6:30 PM
Day 1: Spice Road Table at 7:40 PM (hoping to get a table with Illuminations View)
Day 2: Tiffins 4:30 PM (planning on converting to Tiffins Rivers of Light Dining Package when booking opens)
Day 3: Be our Guest: 5:25 PM
Day 4: Wanyama Safari 3:30 PM (didn't realize you had to pay at time of booking)
Last Day: 8 PM flight home, Bus departure ~5 PM

Any suggestions on these plans? also...

What might be a good lunch option for our departure day? We have eaten at Boma a couple of times so looking to do something else. I could add a 5th day to our park passes for another day of dining/touring in the parks. Or we could make it a resort/pool day. I've considered Disney Springs (Raglan Road and Homecoming seem to get good buzz there). Suggestions appreciated.
 
This visit with family we are planning to spend time at Disney Springs before we leave for our early evening flight and have a nice lunch there.
 
Maybe change your Sanaa dinner on day one to lunch on last day. You can see the animals at lunch time. Go to Disney Springs on your first night! Tons of places to pick from!
 
We usually head to Disney Springs for last minute purchases, a late meal, and to snag sandwiches from the Earl of Sandwich to eat while we wait for our late flight.
 

We have gone to Wolfgang Puck Express several times on our departure day.
 
Raglan Road is really wonderful. It would make a lovely last day lunch, but an even better first day dinner if you're open to moving Sanaa to your departure day. Raglan Road has live entertainment in the evenings - Irish dancers and a band - which gives dinner a leg up over lunch in my book.
 
I completely agree with the PP. Raglan Road for dinner is definitely a must do over lunch there. The entertainment and atmosphere makes it so worth it. The food isn't bad either--but take a look at the menu, they have fish/chips and a burger but many more irish dishes to choose from. I have tried a few of them and was never disappointed.
 
We always do parks the last day. I try to get a flight out later in the day so we have at least 4-5 hours in the park.
You may want to do another day to get FoP FP+ since it seems like you need to have a longer stay to get those. I think (if my math is right) it'll cost you an extra $40 for another day.
 
I like a resort day on our last day. We used to get a half day in at the parks, btu now we like to kick back and relax. I woudl move Sanaa to the last day and hot DS on the arrival day.
 
I would add a park day and go to the MK or AK for a few hours. I wasn't a DTD fan and have no plan to go to DS. I really hate shopping in stores and we have tons of shopping malls and outdoor shopping centers here in NJ (also close to NYC and Atlantic City) so I don't want to spend my time doing that while on vacation.

I agree with this idea.
If you do this, Morimoto Asia is a good choice at DS.
 
We tend to have the same flight time out as you do for all our trips home. In the past we would check out and bring our bags to the airline check in. After that head to Disney Springs and maybe do some shopping and then lunch. After that head back to the resort for about 3:30 and just relax till it was time for the ME to pick us up. We tend just to have a low key meal there and just soak the day up before we leave. This next trip in October we are going to head to MK for something different. We ended up with a 5 day pass this trip so we are going to see how this works out for the day.

We have done Disney Springs. Lots to do there.
Our last trip, we spent the day touring different resorts, riding the monorail around. Just a quit down day was very enjoyable.
