what time to book cal grill?

What time would people recommend booking the Cal Grill if we want to watch the fireworks from the restaurant? ie how long does a meal there typically last?

An hour and a half before the fireworks is a good time frame to aim for.

I'd say an hour to an hour and a half before the fireworks. We like to time it to have dessert right after the show. The servers will help you with the timing. If you can't get one at the right time, you can make an earlier one and be able to return and go up to the observation deck at fireworks time with your receipt.

I like to have the ADR either 60 or 90 minutes before. At 60 minutes, we usually have drinks and an appetizer before fireworks. If 90 minutes then the same plus the entree.
The staff are very good at pacing the meal so you are not eating during the fireworks.
