What time should we leave for the airport?

We are flying Southwest.

Our plane leaves at 3:15 PM on a Monday.

We have to return our rental car to National and probably fill it up with gas on the way.

We're staying at POP but will probably be leaving from the Wilderness Lodge.

So what time should we leave for the airport? I'm thinking 12:30. Am I on track with that time?

That probably is good. It takes half an hour to get to the airport. Then the time to get gas. It shouldn't take long to return the car. You could do curbside check in before you return the car. Then return the car and go through security.

I would rather allow extra time to get through security and be sitting at my gate than rushing to get to the airport. There are lots of nice shops at the airport along with a great food court if you do have extra time.
