What Time Does Booking Activities Close

My cruise is this Saturday. My booking window closes on October 25th. Until what time do I have to modify my cruise activities? I have one that I'm on the fence about.

I *think* 11:59pm Eastern. But I’m not 100% on that.

And if it is still open then, you could wait until you’re on board as it would be open there as well.
