what stuff do you leave in the stroller while on rides and what stuff do you take?

Don't leave kids sippy cups. My two year old picked one up off someones stroller and before I noticed, he took a drink. I have no clue what was in it. But, the owners had no clue someone took a drink.
 
We have one bag that stays under the stroller that has the extra clothes, water bottles, snacks, diapers and wipes....

and the other bag which is actually our camera backpack stays with us at all time. It has our camera, our passporter book (heaven forbid we lose that!) and anything else that we wouldn't want to lose or get stolen.
 
So this is what we do with the strollers. I pack as light as possible, my camera, room key and that is it. Then with the kids I always have a plastic bag from a grocery store and take a diaper rolled up like it has been soiled and tie it to the stroller. The only thing is that is where we keep the kids stuff extra diapers, sippy cups and snacks. It makes it look like it is a trash bag tied to the stroller. Lots of trips no one has ever touched any of our stuff.

I think a lot of people know the old "dirty diaper" trick. So hopefully you won't lose anything trying to use that trick.
 

We tend to travel relatively light (DW, DS6, DS4, and myself). We went recently and the only things we brought with us when we left the stroller was our small camera (hooked to my belt), and our fanny pack which had our cards and money (and, of course, fast passes). For the things with modest value like our refillable cups and spray fan, we just kept it out of sight or packed in a tight pocket under the stroller.

I think you are reasonably safe at Disney, but like anywhere/anytime you want to use common sense. I felt that if we have the unfortunate luck of being in proximity of a thief, we would make it just difficult enough for him/her to move on to another - easier - target. Overall I would suggest using just a little common sense, but not dwelling on it.
 
One of my co-workers had his kid's stroller stolen in the MK last week. I am thinking I wouldn't leave anything that I don't want to loose in the stroller.
 
We've left the diaper bag in the stroller seat or underneath. Not sure if I'd leave something hanging over the handle where it can easily be snapped up by a passerby. We've never left wallets, purses or cameras in the strollers (we use 2 umbrella strollers). It kind of depends on where you are parking your stroller in my opinion. There are usually cast members around rearranging your strollers in a tight little "parking lot" in rows and I guess I feel more secure in those cases even if I shouldn't. I'd be careful of leaving drink cups in plain sight, even food that is not tightly wrapped could be invaded by squirrels! I've seen a squirrel attack the underneath of a stroller at Epcot to get to food. Send your souvenirs to the front of the park or your resort to be picked up later.
 
We just got back last Monday from our first trip. My plan had been to have a backpack and camera bag for my DSLR camera, and bring both of those with us everytime we left the stroller. The backpack had diapers, changes of clothes, autograph books, snacks. Well, by day 2 we found it a pain to take that with us, and we had also added a tote bag with light-up toys, stroller rain covers, extra sandals. (We traveled kind of heavy!). We took our chances and began leaving everything but the camera bag, and never had any problems. We did buy one of those overpriced $17 misting fans, and we took that with us. We left our refillable mugs with no problems, but we did take any kind of souvenirs or anything in a Disney sales bag, so as not to tempt anyone. It seemed like most of this kind of stuff was left in most people's strollers, and we never heard of any problems. HTH!

We just returned on Saturday and had nearly an identical situation/experience.

I surely wouldn't leave my KTTWC or camera in the stroller, but I did leave my backpack with ponchos, water bottles, resort mugs, first aid kit, etc in the stroller and it was EXACTLY as I had left it every time. No one disturbed it at all.
