What side dishes do you make for Christmas?

We're having ham and turkey.

I don't want to be in the kitchen all day/night, so I want to do something easy. Found a recipe on allrecipes for a mixed veggie casserole and I thought I might make that. What else?
 
green salad, broccoli casserole, mashed potatoes, gravy, sweet potato casserole, rolls.
We're having roast beef in the crock pot.....every thing except the potatoes and gravy will be prepped the day before.
 
Mashed taters is always good. We now add one sweet potato for every two regular potato. Taste is really good, and slightly healthier? :confused3

Some people like the green bean casserole, and that can be made but no cooked a day in advance.

Gingered carrots - yummy.

French cut green beans with almonds.

Crock pot! Forgot about that. I wonder if there are any good veggie recipes for the crock pot.

I've never been a big fan of green bean casserole, but the green beans with almonds sounds good.
 
We do steak out on the grill and for sides have baked potatos (and I have cheese, sour cream, and bacon bits for those that want their's loaded), green beans with mushrooms, corn, tossed salad and rolls.
 
We're having meatballs and rice for dinner. Pinto beans, green bean casserole, salad and something else will probably be our sides. We're also having rolls. A lemon meringue pie and a carrot cake are our desserts.

Lemon meringue pie here too and fudge cake chocolate cheesecake from Cheesecake factory via costco.

I'm sure you can find veggie recipes for the crockpot.....here has to be a lot just searching online. I like to use allrecipes.com and go by there star system to find good recipes.
 
I usually make either beef tenderloin or prime rib for Christmas. I make sour cream/cream cheese mashed potatoes, mandarin orange salad, green bean casserole, asparagus, and whatever for dessert-usually some pies or whatever DH wants to bake. This year we are doing a fondue so we will have some appetizers for the cheese fondue-bread, veges and whatever else I can think up, we will do steak, shrimp and chicken for the main course and a chocolate fondue for dessert with berries, pound cake and pineapple.
 
I've become a big fan of "make ahead" and crockpot dishes. :thumbsup2

Also successfully crockpotted Allrecipes "Party Potatoes" (probably similar to golfgal's mashed potatoes) for Thanksgiving - did them the night before & put them in the slowcooker for 3+ hrs on low. http://allrecipes.com/Recipe/Party-Potatoes/Detail.aspx

Same for bread stuffing: http://allrecipes.com/Recipe/Slow-Cooker-Stuffing-2/Detail.aspx About 3+ hrs. on low. (See reviews about amount of broth used.)

There's always the oldie-but-goodies: hashbrown cheesy potatoes, 7 layer salads. Hey - none are low calorie or healthy, which is why we make 'em once or twice a year. ;)
