What should we do???

[Kimmumum]

We are going to the Goofy marathon next January. We have gone to Disney many times and always with the kids. We have decided that next year the kids will not be going (we think they would be REALLY bored). We will probably only have 1-2 "spare" days. How would you spend them? What are some things that you would do that you wouldn't do with the kids are with? I was thinking about the "Keys to the Kingdom Tour" but what else? Any suggestions?

eat at a really nice restuarant - Artist Pointe at WL, Calf Grill at Cont, YC Steakhouse.

enjoy all the countries around Epcot.
