"I took the hopper off the passes figuring it will be so busy at the parks I am not sure hopping will really happen. Is it still quiet enough that I can hop then or will parks be closing during that time i am there???

The value of hopping to me is flexibility. For example on the 22nd your spend your day at Epcot, but would really like to see Wishes, parkhoppers will let you do that. Our 5yo does not like fireworks and cried during Wishes. Later in the week, he asked to go back to MK to see Tinkerbell fly over the castle, we didn't have a great view the first time. Well he stayed for the entire show, no whining. You have young kids in your group that might have similar reactions to things the first time, yet get over it the next time. Its amazing to watch them develop right before your eyes at Disney.
There are also weather concerns and hopping allows more easily for changes to plans and do overs. Our original Epcot day got rained out. So we did an Epcot, MK, MGM day a couple of days later. MGM due to a Fantasmic reservation and MK because my nephew asked to go there EVERYDAY. Its a great park for the young set, yet the other parks all have something for them too, but MK really is the most magical. This was his first trip, MK was his first park and Cinderella's carousel was his first ride.
