What should I plan in advance?

I'm off to DLP in February & can't wait. I've been once before years ago but didn't book a thing & I'm sure that it would improve our time there if we were a bit more organised.

So what should I plan in advance? Is it a good idea to sort out restaurants or should I just see how we feel when we get there? what else can you book in advance?
