Looking for ideas to bring a dish to MIL's for Christmas dinner. She's doing the ham and the potatoes (probably scalloped, but maybe mashed). Someone else already signed up for broccoli salad, and it's wide open from there.

Nobody is fussy about having to skip (or take less of) a side dish because of their own particular diets, but major bonus points for something that accommodates all these at once:
low sugar/low(-ish) carb
low sodium
no tree nuts

I always do either roasted brussel sprouts or grilled/roasted veggies, when bringing a low carb side dish. I use high quality EVOO and fun spices to give them zip without a lot of salt. Maybe some parm cheese. I eat Keto, so that’s my wheelhouse.

Roasted green beans with garlic and lemon
Broiled pineapple with ginger and basil https://www.wholefoodsmarket.com/recipes/broiled-pineapple-ginger-and-basil

These all sound good and were things I was going to suggest, too. So thinking of something else, not sure how many people you’re serving, but roasted acorn squash is delicious, too. We cut them in half, then sprinkle with salt, pepper and garlic powder. Place on a cookie sheet and add a dab of butter and brown sugar on the inside of each halved squash. Bake for about 40 mins and baste the butter mixture around the top and inside of the squash a few times while roasting. For travel you can mostly cook them at home in a disposable tray and cover w foil for the ride, then heat in oven again when you get there. Bring enough so everyone gets one half.

Deviled Eggs
Cucumber Salad
Caprese Salad - can be done bite size on toothpicks.
Marinated Roasted Garlic, Olives, Roasted Peppers, & Pickles plate.
Garlic Parm Zucchini
Cauliflower Mac & Cheese
Southern Pimento Cheese Dip - serve with crackers & veggies

I went with the deviled eggs, and they were a hit. 🙂
Awsome, they are such unsung heroes - personally I love them with relish but I need to make a few that are like little egg salad pods for those who don't like the sublime sophistication of chopped sweet gherkins.

I also put relish in my egg salad so those people would be out of luck around here. :teeth:
