What rides have single rider lines these days?

Everest single rider was almost a walk on the other day...so that for sure.

The best one for me is Expedition Everest. Often very short.

Millenium Falcon has one, you will almost always end up in the back row as a single rider.

Test Track and Rock'N'roller coaster. they are not always very fast.

When you get to the split point at Space Mtn, tell the attendant you are single and they may send you around to a special gate to wait. Works pretty well, sometimes I wave at the ride loaders so they see me.

Several other rides, such as ToT and FoP, they will sometimes look for single riders to fill up a load, so be alert and you may get to jump ahead.
