shelbyjosh- Where did you hear that Hong Kong was becoming an EPCOT pavillion? What a waste of effort that would be with so many interesting and unique "real" countries to showcase.
When EPCOT opened, there were three additional pavilions on the drawing board: Equatorial Africa (with author Alex Haley as spokesman), Spain and Israel. The proposed African location still maintains a few small craft shops.
There was also serious interest for a Russian pavilion, but when the Soviet Union collapsed, there was no one left to carry on the discussions, and of course, no money for sponsorship.
Of the original three, my choice would be Equatorial Africa, but the region is already represented at AK pretty well.
With that said, my first pick would be South America, with all of its countries represented and plenty of restaurants! Australia should be there as well.
