What "must see" shows/tours/reservations might not be on our radar?

We have been to Disney World about once every 4-5 years. But it seems there's always new/interesting shows or attractions that pop up in between. We are very familiar with the new rides, so I'm mostly asking about shows, hidden gems, restaurants, etc. that maybe are talked about less often.

For example, Roundup Rodeo BBQ didn't exist the last time we went, but seeing as our kids are big toy story fans, we plan to attempt a reservation here.

Any others?

AK has a ton of these things that fly under the radar, probably because people have this "half day park" mentality about it that's really a shame. Take the train up to Rafiki's Planet Watch and do the animation class, it's free and a ton of fun...they teach you to draw your favorite Disney animal characters. AK also has Wilderness Explorers which is another free activity that's fun and very educational, kids and adults can participate and you earn badges from CMs at various attractions.
