Sustainable fish? I've seen this on a few menus at WDW recently. I'd like to know what it is. Thanks.
 
Many fish are over-fished, so the populations in the wild are running out very fast. Many fish also take years to come to full size, so they can't be fished/farmed as often.

Sustainable fish is fish that replenishes naturally fast enough to keep up with demand. A list of sustainable and unsustainable fish is here: http://www.montereybayaquarium.org/cr/SeafoodWatch/web/sfw_regional.aspx

Part of fish sustainability is using a variety of fish so no particular variety gets over-farmed, so when you see it on a menu, it means "one of several sustainable fish that would be suitable for this dish" (like one of several white fish, for example).
