What is your "must do" at Disney

I was wondering what everyone's favorite, must include in the time and money budget, things are at Disney. We normally try to include one "special" experience at Disney. Something we haven't done before. I also budget and plan for dh and I have have at least one dinner or something alone at the beginning for him to relax, and I normally budget for my parents joining us for a couple of days. We loved early breakfast at Cinderella's Castle so that may get added to our list. Riding the monorail into Epcot at night is another (don't really have to budget for it, except it makes us more likely to get hopper's) We absolutely have to have mickey ice cream. AndI like to get the kids each a pin, they didn't get into trading them, but they use them to remember each different trip. What are your must-do experiences?
 
Pirates of the Caribbean, Dole Whip, Earl of Sandwich and likely to be added to the list now: dinner at Sanaa.
 

first nite we ride the monorail both MK & Epcot loops, Go to Chef Mickeys for dinner, the watch the Eletric Water Parade. We don't do a park on our first day/night.

Dinner at Kona with a ride on both monorail loops, followed by sitting on the beach to watch the Electricl Lights Parade! We do this religiously even if we are in Florida for reasons other than a Disney vacation!
 
Dinner at Boma:thumbsup2 can't miss it. But I like that idea of a Kona dinner,ride the monorail,watch the lights night also....:goodvibes
 
Stopping on Main Street and sharing a piece turtle fudge with DH. It isn't a trip without doing this.
 
We always take a tour. The type of tour we take depends on our budget. They're always fantastic and give us a new appreciation of WDW.
 
Breakfast at the Crystal Palace, Dole Whips, yummy popcorn in a cute souvenir container, Fantasmic at HS, letting our kids buy whatever they want at a Disney World Gift Shop, and watching the fireworks from our room balcony at the Grand Floridian.
 
outside of our package we always splurge on car service. it may not seem disney related but not having to take the "magical schoolbus" as my mother calls it gives us lots of extra park time. we have been in MK within an hour of our flight landing, inlcuding check in and taking a disney bus over thanks to car service. this means we get almost a full first day and last day of our trip.

for myself i buy an official disneyscrap book and last trip used a coupon code to splurge on some photopass prints which i framed.

we also have paid to upgarde to deluxe dining plan so we can get in about two nicer dinners.
 
Character breakfasts at Chef Mickey's and Akershus! Plus ice cream on Main Street USA. We also love to stay at SSR and have a pool day.

Illuminations at least twice and Wishes! Soarin', Dole Whip, Earl of Sandwich, Columbia Harbor House, Teppen Edu and Coral Reef. The smoothies by the Rock n Roller Coaster are also a must!
 
Definitely Wishes, Main Street Electrical Parade ( almost missed it last time and I thought I would have a panic attack) Pirates of Carribbean, Splash Mountain and atleast a litltle bit of pool time.
 
It seems the favorites change as the kids grow, but we try to repeat favorites attractions - last time it was space ship earth and primevil whirl. We also ALWAYS sing along with carousel of progress.
