With summer just around the corner I'm sure many of us will be either hosting or going to many picnics. What is your favorite dish to bring? Whether it be the main dish, side dish or dessert!!!

I typically like to bring a fresh fruit salad - although that can get pricey or a tortellini salad I make

Tri color cheese tortellini
Sliced bell peppers - red, green, yellow, and orange
grape or cherry tomatoes
black olives
Italian dressing
Shaved paremesan on top as garnish

sometimes Banana split cake-if you do a search on it there are alot of different types-just go with what you like :D

Chilli sauce, grape jelly and meatballs--yummy never any left overs

if I'm in a hurry I'll make cheesy potatos in a crock pot (from a box!!) or a veggie tray

I either buy a lemon doberge cake from a local bakery or get a cheesecake from Sam's Club.:thumbsup2 They get eaten with pleasure, and I don't do any baking!

I like to take a trifle in a trifle dish. It looks pretty and can be sooo easy. Just layer cubed cake, pudding, and maybe some fruit--whatever sounds good together. Top with whipped cream and maybe some sprinkles.
You can get fancier with a homemade filling.
In summer I like to layer cubed pound cake, crushed pineapple, and vanilla pudding. Top with whipped cream and toasted coconut. In winter, cubed brownies layered with chocolate pudding; top with whipped cream and crushed toffee bits or M&Ms.

Before I read the text of your post my first thought was buffalo chicken dip, however, once I opened it up and saw that you were looking for summer potlucks my answer would change to deviled eggs or dorito salad.:thumbsup2

Could you share this dorito salad recipe? Sounds interesting!!!

DORITO SALAD

1 lb. ground beef
½ head lettuce, shredded
1 lg. or 2 sm. tomatoes, chopped
1 green pepper, chopped
1 onion, chopped
8 oz. shredded cheddar
1 lg. or 2 sm. Catalina dressing
1 bag of Doritos, crushed

Cook meat and drain. While meat is cooking chop tomato, onion and green pepper. Mix together with drained meat and cool. If not serving right away do not add cheese, lettuce, dressing or Doritos. When ready to serve, top with cheese, lettuce, Doritos and dressing. Add a bit of water to the dressing bottle to make it moist. Mix together and serve. If desired serve with an additional bag of Doritos to dip with.

My version of potato salad:

Red-skin potatoes, with skin, cut into bite-sized pieces and baked on a cookie sheet for about 45 minutes on 400
hard boiled eggs
Miracle Whip
bacon bits

I just mix it however I feel like. I usually use lots of eggs, not too many bacon bits, then the Miracle Whip until I like the consistency.

Everyone LOVES this, and I just got the recipe out of a magazine (maybe a Miracle Whip ad!).

A friend at church gave me her recipe for roasted red potatoes and green beans with mustard vinagrette. It's the perfect answer for folks who can't eat Mayonnaise-based potato salad.

I make pretty much the same salad but I add taco seasoning to the meat and sliced black olives:thumbsup2

Sometime I bring nacho dip and it always goes really fast and it's simple to makes.

1 layer of sour cream
1 layer of salsa
some chopped up chicken
top with cheese

I like to make a hummus dip.

I don't have the exact recipe on me but here is the gist of it.

- Process a large can of garbanzo beans in a food processor with a little tahini
- Layer it in the bottom of an small pan (mine is a glass 8" by 8" pan)
- Then blend sour cream (1 cup) and feta cheese (1/2 cup) and layer on top
- Sprinkle chopped tomatoes and olives on top
- Served with pita or tortilla chips

Better Than Anything Cake, Pay Day Bars, layered taco salad, fruit dip (cream cheese and marshmallow fluff) and fruit, chili dip (cream cheese, chili, cheddar cheese), pasta salad (pasta, veggies, italian dressing) are some of my faves. The Better Than Anything Cake is always a huge hit!

Traditional mustard potato salad, deviled eggs or something with the silly name Pistachio Delight. It's just Cool Whip, pistachio pudding mix, crushed pineapple and nuts and people always love it.

My favorite pot luck food is party potatoes - as long as they're made with hash browns and not mashed potatoes. Yum. :goodvibes
