What is your favorite cool summer meal?

We like to take pasta shells and mix in some tuna, miracle whip, and a bit of relish. Serve it cold with some cold watermelon or cantaloupe. It is really yummy and hits the spot on a hot evening.
 
Before I married my pasta fearing husband I loved to have this on hot hot days.
Take some rigatoni and prepare it as directed on box.
While it's boiling; cube up a package of mozarella cheese, 4 fresh tomatoes and shred a bunch of basil.
When the pasta is done and still hot add a bit of butter, salt and parm and throw the mozarella cubes, tomatoes and the basil. Stir to combine and serve. Yum.
 
My favorite summertime dinner is garden fresh sliced tomatoes, garden fresh cucumber and red onion salad and corn on the cob. And I'm a meat lover!
 
I make my mom's shrimp macaroni salad...

1 pkg tiny shell macaroni
2 cans (tuna size) med shrimp (I like the Chicken of the Sea)
1/4 cup green pepper chopped very fine
1/4 cup sweet onion chopped very fine
2 tbs red pepper chopped very fine.
1/2 to 1 cup Miracle Whip until well coated
Salt & Pepper to taste

Chill well and serve cold.

We have a green salad and/or bread with this for a meal... but of course it is also a great side dish at a BBQ too.
 

I like a salmon salad like my mother use to make. Mix good canned salmon with chopped boiled potatoes, chopped boiled eggs, a bit of pickle, mayo, mustard and seasoning. Chill and then mound it on a plate covered with lettuce leaves and decorate the top with sliced tomatoes, sliced cucumbers and whatever else sliced veggie looks appealing.

I ate this a lot growing up and it's so cool and summery, and yet it's quite filling.
 
All of these are great ideas. Now to get my hubby and dd to eat a pasta salad or think a fruit plate is a complete meal...Sigh.

For those that use Miracle Whip in salads, will it be as good with just mayo? We don't care for Miracle whip.

Gazpacho (sp?) and some crusty bread. I absolutley love it!! I even got my kids to love it even though they dont love the veggies. I just process it till all the veggies are smooth.

Ok so technically its cold tomato soup but its so yummy and refreshing on a hot day.
 
Here is one I love -

Veggie Pizza!

Roll out, flat, a roll of refridgerated crescent roll dough (also comes in reduced fat). Bake as directed. This is the crust.

Mix a softened tub of cream cheese with some ranch seasoning. Add chives if you want. Spread it across the crust.

Finely chop a bunch of crunchy veggies and press them into the cream cheese. I like carrots, green pepper, snap peas, and onions. I know a lot of people put broccoli on this.

Put in the fridge for a few hours and slice. It's yummy!
 
Miracle whip adds a certain flavor but if you don't like that flavor then you don't want it anyway. ;) Mayo will do just fine if you don't like MW.
 
Favorite hot weather meal, um, can I say : HOT FUDGE SUNDAES?! :teeth:

You can use mayo and mustard.
