I just use the "quick bread" banana bread mix in a box, add in mashed banana and about a 1/2 cup (sometimes more) of chocolate chunks. Easy and super yummy!
3/4 cup sugar (I use less)
3 large mashed bananas (I use however many I have)
3/4 cup oil (you can use 1/2 oil and 1/2 applesauce)
2 eggs
2 tsp vanilla
2 cups flour (I use all or 1/2 whole wheat)
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
-mix above in two separate bowls and then combine
-bake in greased pan at 325 for about an hour
I usually double or triple the recipe and cook several smaller loaves. You can wrap them in plastic wrap and then put two in gallon sized ziploc bags and freeze.
I do put nuts in mine, but I grind them up so there are no chunks. I also usually add chocolate chips (I love it melty and either warm from the oven or out of the microwave ). I have also added ground flax seed (really no taste) and granola.
If you go www.recipezaar.com, they have the DL banana bread recipe that I have used for years. It makes 2 loaves and I freeze one.
BTW they have a few more Disney recipes too!
Just another suggestion for ripe bananas. When making waffles, I subsitute one banana for the oil the recipe calls for. We like the taste and at least it's a little healthier.

I also add in a splash of vanilla from time to time. If you're looking to make it a bit healthier, you can use applesauce instead of the butter. Either way is delicious, but I'm quite partial to calorie laden food.
