What is the best deal for 3 adults and 2 kids?

My dad is planning on taking my sister and her family to WDW in January for the first time. There would be 3 adults and 2 kids, but my niece would be 2 (3 adults, 1 child and 1 infant). He was thinking about getting 2 rooms at ASMO, but I was trying to look for other options that weren't that expensive. If my family decides to join them I don't really want to stay at ASMO because we would have a few resort days and to me I would rather be where there are more amenities (not that we have to stay at the same resort although it would be nice). I think they could stay at POR for $15 extra a night? What about the other moderates? I read something about paying extra for a roll away? It looks like the best deal for a deluxe is a standard room at the AKL and WL and paying $25 for the extra adult? My dad is also a teacher, so what about the Dolphin? I read that there is a $25 fee for a roll away, but what about for an extra adult? My niece could just sleep in a crib and my dad could sleep with my nephew? I'm interested in a moderate or deluxe. This is a special trip for my nephew, he is handicapped and my dad told him if he learned to walk he would take him to WDW:D He worked really hard and it has taken him seven yrs to do it and now he's going to WDW;) BTW they are only planning on 3 nights.
 
They'll be allowed to stay in one room in any of the resorts, since one of the children is under 3, but they will have to pay the extra adult fee at all of them since they have 3 adults.

Since the trip is so short, and since there are young children involved, I'd try to stay at the most conveniently-located resort they can afford. I'm guessing they'll spend a lot of time at the MK. If that's the case, they may want to look into WL. If some of the people in their party want to go back to the resort to rest, they'll be able to get there easily using the boat. If they're concerned about space, it may be a good idea to look into a resort that would offer slightly larger rooms. Either CR or the Poly would be great, and they both offer excellent locations. They may be able to get a pretty good deal on a CR garden wing room.
 
If they don't mind sleeping five in a room, some of the rooms at POR have a trundle that pulls out from under one of the beds that a child can sleep on. Then they wouldn't have to have a crib to take up more floor space. POR is beautifully themed and connected to POFQ, so you get two resorts for the price of one.

A monorail resort (GF, CR, Poly) would probably be great with your nephew and all of their rooms sleep five. The Contemporary has the biggest standard rooms on property.

Having two rooms is nice because of the extra bathrooms and a little more privacy. Maybe with a good code they could do two rooms at a moderate.
